I didn't notice the first time they answered if you could swap companion armors (I was too distracted by leliana killing things)

I doubt she was dead. It seems highly unlikely that they would kill off a party member off-screen in that way. Besides, there was no decision being made, Sera and the Iron Bull walked out on their own volition.

Seems more likely that she is wounded and unconscious.
Could you please clarify how this compares to a DAO conversation?
For instance, in Redcliff's castle, right before the march to Denerim, there are three dwarven commanders discussing the readiness of the Orzammar forces. If you approach them, you are pulled into the conversation where you'll then have the dialogue tree at your disposal.
Will the only differences between this and the conversations in DAI be that you have the option to not approach the NPCs and/or opting out of the conversation at anytime?
The difference is that you don't lose control of your character. So you can listen in and decide to interject if you want, or continue moving along as though it was just another ambient conversation.
Can we choose to unhide it?
You can put yourself into combat at any time, which will show it.

20 minutes isn't a terribly long time when you have 13 minutes of footage to discuss + the odd comment + interviewer

Always tough to tell until you get your hands on it but it looked very good to me. a very free camera that you could swing around, distance seemed good.
