I think it has to do more with how they naturally look. All dwarves look sort of thick looking, but it's not because they are really overweight, it's just how their bodies naturally look.
But see that's the thing. Qunari aren't wild animals, they are humanoids. And I can see them wanting the mages to be athletic but you can be athletic without looking like the hulk.
I'm probably reading too much into this but if a Qunari mage is actually practicing and training their magic, I doubt they have much time for the bench press.

I'd personally want a variety of body types for all the races based on classes.

I can't be the only one to prefer to have my mages have some meat on their bones. Why do they always need to be the pasty, bookorm type? What's to stop a mage from keeping in shape?
I mentioned before, there's a big difference between being in shape and athletic than being hulked out meat head.
All the same I still don't think they all need to be lean just because they are mages. I honestly think magic can be physically strenuous though I could be wrong. If that's the case it wouldn't surprise me if their mages happened to have some physical training regimen they undergo. I just don't think it is awkward at all.
I'm actually rather curious now as to how the typical Qunari would look like now. Everyone we have seen so far has either been a Tal-Vashoth or a soldier if I am not mistaken. They all could be ogres on HGH from what little we have been shown.

Dude, have you ever seen farmers? They are build. They have to be due to all the heavy lifting of bails of hay and pigs and what not. Long hours and lots of physical exercise. I'd actually expect a farmer to be build bigger and stronger than a warrior, The difference being that a warrior not only knows how to fight and use their size but also has the will to do so, rather than just using it pull a cart and lift a cow,
The idea that mages are thin and dainty comes from the idea that all they do is sit around and read books. But for some reason I can't imagine a Qun Mage getting to do much sitting, or reading. They are probably put through the same physical conditioning as everyone else.

Can there be a qunari mage from a farming background? Magic shows itself in childhood, so while she may have been on her way to being a farmer in adulthood (or have been helping out on a farm in childhood) she'd be pulled out as soon as her magic presents itself, and given the whole tongue pulled out big collar treatment that mages get. And then we don't know how physically active a mages life is in the qun.

Tbh it'd be nice if one day in the future we get 6 body types for each race, even if body sliders never become a thing--an ectomorph, mesomorph, and endomorph for each gender of each race.
Then only the mesomorphs would be classically 'jacked'
qunari are born fully grown and ready for battle, none of this 9 month sissy stuff, but a monstrous 18 year nightmare that ends with a grey, jacked, grade a pure beef, ready to serve the qun, qunari

Didn't the ferelden circle get their exercise time taken away because Anders tried to escape during it one time? Or something like that, it was an offhanded comment by the mage in witch hunt.
