They are found in the frostback mountains. They are apparently "massive felines" (suggesting they could carry a rider), they are capable of taking down bears on their own (would be very useful in a fight) and have an "unnatural speed" (cant imagine how that would be useful). And seriously, they're goddamn Lions, who wouldn't want to ride one of them?
Also the in-game mechanics for riding them probably wouldn't be too different from riding a horse, as opposed to say a wyvern or dragon, meaning they probably wouldn't be too hard to add (I say this, I know nothing about game programming so I can hardly judge if they're not added).

Flying puts a lot of stress on the system so it's unlikely until the game goes next gen only. The RPGCodex bog unicorn made me fall off my chair, but I don't see that being in the game either.

According to the legends the Griffons are not completely wiped out and some still live, but know one knows where.
