Incendiary most of the time.
Warp Rounds seem to go through their shield, I tested it by shooting a Scorpion bullet with Warp Rounds on a Guardian's shield and it took damage before the bullet exploded. It might be the same for Incendiary. You can however mail slot them or hit their feets as well in order to kill them.
Nah, I use in fact my Hurricane against Guardians. I knock them back, then I put a few quick rounds in their faces. It's like eating pistachios!
