Right? Not a chef, not even close, but I am in the medical technology field, and the number of people actually diagnosed with an allergy to gluten as opposed to the ones who just decide they are, arbitrarily, is staggering. In many cases, its actually detrimental to research, because the individuals who have decided that they have gluten issues, actually have undiagnosed thyroid problems; but since they have decided that gluten is the problem, they go years and years, getting worse and worse, with an improper diagnoses.
