If you want a challenge, play in a gold geth lobby with a French host who's running at 0.1Mb/s and the other two players are n7<100 and using common mk2 weapons.
Then try to use an ops pack... there's your challenge
The challenges were irrelevant to me from the start. The only challenge i pursued for was the Biotic God because it was the only title i wanted. Not sure what that has to do with feeling like Gold is too easy.

Maybe you should try taking some of those Vanguards you've never played out for a spin, off-host. Or expand your Shotgun use a bit. Or watch xcal's TECH ARMOR vid and try to add to your 980 points. Or follow some of the other advice about duos etc. Or form an all-Krogan team. There is so much fun to be had in this game, but many people miss it because they won't experiment.

Platinum is even easier, you're all scrubs if you think platinum is harder than Bronze
I started a platinum. Another player gets added. He goes down immediately. I run over, revive & get downed. I had to waste 2 medigel & a rocket to get out of the mess. Then the bastard leaves. Then you get added in & YOU immediately leave. Then both of you get added in later anyway. Total waste of time. If you both had just stayed in the first place I would have been in better shape for the later waves. It was downhill from there so I said eff it & quit & played some gold. I was already in a really pissed off mood anyway. This stupid ass game doesn't know how to add players in a timely fashion. Makes me sit in the lobby for hours. The only thing I can do is start solo & hope it adds players. Nothing is more frustrating than when players finally get added but then leave immediately. Or when I start with 4 but end with only 2. Half of the games I play start with 4 but end with just 2 of us.
So don't talk to me about rage quitting when you quit immediately upon entering the match. Oh! Nobody was supposed to know that little detail right? Just make me look bad & don't tell the full story right?

First off I had no equipment on. That is why I left the first time. Who wants to join an in session Platinum game with no gear? I know for a fact I'm not the only person to do this.
And apparently you've never heard about searching a match, rather than hosting? That's what I do all the time. It's your fault for starting the match by yourself, don't blame the players that drop into the game for that. Maybe your Xbox froze, but from what I saw that was not the case. You got stomped and instantly left, on WAVE 9!! Did you not have faith in your other teammates to pull through? If it's any consolation, we did get mission successful.

I have to disagree a bit. I've been trying to gimp myself as much as I can when playing this game and I still find Gold to be too easy.

Ah, but then you're not on PS3, so you can't understand the true pain of playing most of the Vanguards off-host! I have 3 alt A/Cs where I do my self-inflicted gimping, and I can manage to contribute well with uncommon weapons, but I still don't find Gold easy because I have few consumables/capacity.
In all seriousness, I don't believe you are representative of the majority of the player base, for whom pugging Gold without one of the 'big' kits can still prove quite tricky. A bad pug match can often be harder than a solo, which is partly what makes it fun for me and my masochistic tendencies.
So just let me get this straight.

Thanks for saying this Hoochie. I don't get why people can't understand the simple fact that it may not the best idea for everyone to host when the player base has dwindled.
Lol ive gone through platinum games with only a gear bonus to rack up on credits and save consumables. Ive gimped myself in platinum running through it with a pheaston or the tempest.
People have done gimpy platinum solos before. You make it sound impossible to play gold gimped.
It's even relatively painless when the other players run consumables and do the bulk of everything!

Gold is easy in comparison to what it used to be. Everything other than the "enemy execution feature" has went toward the way of the player. Put back in enemy shield gate, eliminate gear, level 4 equipment, most of the dlc weapons, and cut consumables in half and gold isn't so easy. People thinking playing Plat is the highest level of difficulty etc but when you get right down to it really it isn't **** compared to gold when the game was introduced.
Nothing has changed other than the incentive to spend more credits on equipment and consumables to go versus a hodge podge of different enemy units.
