Anyone ever try a BG trilogy run with 5 members of the party as spellcasters, namely clerics and mages? If so, who did you take, what was your 6th party member if you used one, and how well did it work out?

I didn't play that far, but I got to chapter 5 (reached the city of Baldur's Gate) with a party of only mages (PC, Xzar, Dynaheir, Xan and Edwin). This was vanilla BG 1. Beginning was hard, of course, then we became more and more powerful. Main tactics was disabling spells, then bonk the enemies with staves, use slings/darts, etc. PC was the "tank", with heavy use of Mirror Image, Strength, Vampiric Touch and was holding Dagger of Venom.

I once did a party of 5 cleric mages - the early going was extremely difficult, as everyone could be one-shotted. We only lived because we were doing disablers all the time (sleep.command, hold person, etc.). Even so our "tank" died a ton. Also for the BG 1 portion, I was using vanilla BG 1 - this allowed entangle, which in vanilla is much better than the BG 2 version, as it affects enemies only, not to mention clerics get the spell in vanilla but not BG 2. However, if we couldn't disable an enemy we were often running like heck. It got a lot smoother once we got to level 5 cleric, but being multis and almost full party that took a long time. If you search for "Cody and the cleric/mages" you can see his run in the no-reload threads. He defeated Sarevok and made it to Spellhold but got killed by Lonk via Horrid Wilting. Also early BG 2 was quite hard, but with more levels and more powerful spells (and just more spell slots), things got to be much smoother.

This is perfectly possible, and eventually really overpowered, although you may struggle to start.
You need to decide how broadly you are going to classify 'spellcaster'. Is multiclass allowed? Are Bards or Druids? I would take a mix of builds, including a sorceror, wild mage, pure cleric (with kit), & cleric/mage. As always, traps are a problem, but you could add an illusionist/thief, bump the thieving stats of your familiar in shadowkeeper, or just soak up the trap damage with spells.
I ran 6 bards through BG2 using the Rogue rebalancing mod, and they were super overpowered. Two blades did all the fighting, while two vanilla bards, a skald, & a jester sang. Offensive spin with belm, kundane, & improved haste sorted the APR problem, while the singing boosted everyones saving throws, damage etc, and there were lots of malisons & glitterdust to help the jester confuse enemies.

My mistake on not clarifying. Bards, Druids, and multi-class characters do count for me. For myself, I'm primarily only considering the NPCs built into the game. I'm a sucker for the banter.

Ah, right. Should I mention that I used the level-1 npc mod to make Korgan my skald, my PC & Haer'dalis were blades, Kido (mod for the evil) was the Jester, Keto (Keto mod) & Nalia were vanilla bards, and I romanced Nalia (de'Arnise mod)?
Well if you don't want to change NPC classes, you can get by pretty well with a Sorceror PC, Edwin, Viconia or Branwen, Quayle (> Aerie), Tiax (> Jan), and the 6th .. whichever grabs you out of Eldoth, Garrick, Branwen, Viconia, Yeslick, XZar, Xan, Faldorn, Jaheira, Imoen dualled, or later Nalia, Haer 'Dalis, Anomen or Cernd?
There's a mod that brings Quayle, Tiax, & Viconia closer to Beregost so you can collect them earlier.

I would really recommend the mod that the Potty mentioned. Level 1 NPCs can be used to change the class so that they are pure mages, pure clerics, or whatever specialist mage that you want.
Thus you could have Quayle as an illusionist or as a cleric. You could make Imoen into a pure conjurer. It is as flexible as you want. You can make minor tweaks or make major changes. It is up to you.

I have only tried a six spell casters party in BG2 (custom party) but it was extremely fun. However, it does require you to meta-gaming a bit. You heed to know which monsters have high magic resistance, which is immune to what type of magic and when a big fight is coming so you can pre-buff. Nevertheless, the party was just op starting from mid-way through till the end, but one major downside is that you can't use a lot of the awesome items, and there might be a shortage of spelI caster equipment. I had 2 mage-cleric, a pure cleric, 2 sorcerers and a conjurer.
