Well without even realising it my MShep is locked in a romance with Liara, even though I rejected her when she asked if I had feelings for her, to my horror it seems the romance flag for her has been activated for some stupid reason, and I can't find any way to opt out of it. I was wondering if there is something that im missing to get rid of the romance flag, whether it be in-game or through console commands, and if I did do such a thing, would it effect ME2 in any way compared to if the romance flag for liara had never been activated.

I hope so, I haven't progressed further than the part where Liara and Shep have a small intimate moment before it (thankfully) being broken by Joker, all of this after the argument with the Council. Before that I had no idea that the romance flag was active, and I was hoping for a way to deactivate it which is why I came here.

Unfortunatly it seems I can't, I had no extra dialog options. If you mean with encount on the way to Ilos, I had the option to refuse her offer of sex, but no option to end the the romance.

Once you have the 3rd convo with Liara I believe the game PICKS her for you. The same happens with Ash and her 4th convo I believe.

I'm in the same boat, except I intended for it to happen up until I realized that I would be stuck with Liara into the second game unless I cheated on her.
Does rejecting her before Ilos really end the romance for good? I want to save my character for someone in Mass Effect 2.

That's what I was wondering. The only save I have for my char is right before Illos, and no idea if rejecting her then ends the romance. Guess I'll find out eventually.
