It's a roleplaying game. If you didn't get everything you wanted in one playthrough, role-play differently to experience the other content.

Not only have our past characters been violently ripped from our hands, but the whole romance situation is presented as "Go in blind, reroll if you're not happy." I'm LOSING respect at this point.

I do, depending on the game. But Bioware's titles are great for replayability, so I should absolutely be playing them more than once.
The only Bioware game I have not completed twice, appropriately enough-DA2.
Hopefully DA:I gets more than one run out of me, like Bio titles usually do. And this romance thing helps that along.

It adds importance, variance, and thus substance to player choice. By choosing specific options, you have certain things available to you, and other things locked off. That way, you're influenced to make new choices you wouldn't usually make to experience new content, whether that be playing a character as a different gender than you're used to, romancing a different character, going to a different place, etc etc
As for "past characters being violently ripped from our hands" if you're referring to the playable characters(Warden, Hawke, Inquisitor), it was advertised many years ago that each Dragon Age title would have a different playable protagonist. That hasn't changed, and isn't likely to change ever.

"Our characters" "violently" It sounds like you didn't have any true respect to begin with- the creator of the work is the owner of it, not you- you pay for the pleasure of experiencing their ideas.
The thing that concerns me about race-gating is that some race/gender/orientation combinations might get stuck with no choice of LI. I'd hate my dwarf to end up in the same position as gay and lesbian PCs in DAO because one of the male options thinks she's too short

If everyone gets choices and they're just different choices depending on your character's race, I would be OK with that. But I'm not going to be very happy if - inventing an example here - straight human male Inquisitors have Cassandra, Vivienne and Scribbles and my dwarf only has Cullen.
(No offence to Cullen fans, but the only way I'm romancing him is with a mage.)

Player choice isn't being taken away. Quite contrary in fact, it is actively requiring the player to make a choice (which I suppose is the point in having a choice to begin with).

In DA2, I could play the game with the same exact Hawke the exact same way regardless with the only exception being what his LI is. I feel it pretty much limited the replayability of the game on top of the other things that hampered DA2's replayability. Don't get me wrong, I still played several playthroughs of DA2 but it was only like half of the ones I did on DA:O.
See, I would feel a lot more reassured by that if I knew what he meant about 'particular group'. Does he mean every combination of race, gender and orientation has options, or does he only mean that no particular race is favoured? There could be four options for dwarves in total, but if three of them are female that's not much good to my Inquisitor.
I'm thinking that they are going to try to keep at least some sort of balance between male and female love interests. I don't think it's going to be so lopsided as having 3 female love interests for dwarves and only one male. I can see something like 2 out of 3 are for a particular gender or 3 out of 5 for example. You know have it be somewhat slanted towards one side but not necessarily favoring another.
