Gay: Sera & Dorian.
Straight: Cassandra & Varric (Dwarf restricted romance).
Bisexual: Scribe Girl & Cullen.
Not 100% sure on who's straight & who's bisexual, but I'm pretty sure there will be at least 6 love interests in total.
If there's 8 romances, Solas (Bi) & Vivienne (S) can probably be added to the list above.
This list makes me pretty damn happy.
My only issue with this list is that with "only" four female options, they all need to be out in the playing field so to speak. Especially with Sera being gender gated.
And I do agree that part of the reason that Dorian is taking the place of Cullen as my preferred LI is because he is a party member. I always play with my LI in my party. Always.
This is exactly the opposite for me with females. Like I said, my Lady Aeducan is the only gal I've finished DA: O with. While I've started female Hawke's a few times, I've never really been able to get into it. I began the Isabela romance with one of them and just kind of lost interest and stopped playing.
Interestingly, the same thing happened with the ME series. In ME, I played both a male and female Shep. I continued both through ME 2. But when I was able to finally play as a gay male Shep in ME 3, I just couldn't ever complete the female Shep story. Now, every time I replay it, I do a gay guy instead.
I've never been able to play a female Shepard. I like Kaidan but he wasn't enough incentive in the first game, and then when I got him anyway in 3 there was no need. No one else really struck my fancy.
I've made Wardens of both sexes and I liked them both. On the other hand, I've never made a female Hawke that got further than the gates of Kirkwall. Of course, I have a crush on male Hawke, so that has something to do with it too.
Same here. I played female paragon and male renegade in ME because I felt those were two vastly different playthroughs but I've never been able to make a male PC in DA games so far. There's just so many interesting choices with races, origins and classes alone.
I just prefer to play female characters where I have the option because I have to play males in those games that don't anyway (like the Witcher).
And I feel it's just a little patronizing when people (usually those who enjoy making different gender/race combinations anyway) say they like restrictions because it will encourage other players to play different genders/races. I don't need "encouragement" to play something I don't like. I'll never play dwarves because I don't like them and I'll still play females only, even it it means I'll never see a particular romance. I'll be sad if I don't get the companion LI I'd like but I won't rage about it or change my playstyle.

Iron Bull is the only one I can personally see being gated by race, with him only being available to Qunari and Humans.
My best guess is that we'll get 8 follower romances (in total across both genders).

if I had to venture any restrictions race (or class) wise, I'd have to assume the following:
Cullen- humans and elven women (shows an interest to either a human or elven PC in Origins)
Varric- dwarven women or dwarven/elven women only (says he isn't into humans in DA2 plus with Iron Bull's interview he distrusts qunari)
Cassandra- human men or human/elven men (like Cullen but straight female version)
Iron Bull- qunari only or any non-mage/warrior only (anyone who 'wouldn't break' sounds like he'd only be into qunari or only into strong types (warriors))
Solas- elves only or any non-human
Scribe Girl- no restrictions (if she's the Kelly Chambers of Inquisition)
Dorian- males of any race (doesn't seem like the type who'd have any hangups)
Sera- females of any race (seems very open minded race wise considering she doesn't identify as elven or with human culture)
I don't mind gated restrictions based on gender/race as I can probably drum up a PC that fits the romance arc and overall story if need be.

Also, i’m pretty confident that none of the romances will be unavailable for humans, because that’s what most people play as.

They changed it to Dragon Age games after people brought you the 10 of Mass Effect 3 and the 21 of SWTOR.
The only thing they have to beat is 5 romances and that is if they actually count Sebastian as one. Otherwise it's 4...

I can't see anyone being 1 gender AND one race only. And if he is romancable, I don't think Varric will be off limits to human players either.
If I could throw my 2 cents in for a moment. You have to look at the context of the "human" line everyone seems to be hanging on. Varric only says the line IF Hawke hits on Merrill. After you rival flirt with her, SHE says "You must say that to Varric at least once a day" Varric being an awesome wingman deflects this with humor by saying "Way more than once a day! She's can barely keep her hands off me, pity I'm not into humans". This happens even if you DON'T flirt with Varric at all! Varric is clearly just poking fun at Hawke here which is why I don't take it so seriously.
I also don't think Cullen will be "ew dwarves!" because he called them "cave dwelling heathens" in Origins XD. Honestly, compared to what Varric says that's more of a reason to dwarf-block Cullen since he isn't joking when he says this.
I too believe that IB will be bi, maybe not available to dwarves as on his character profile it says he will "hop into bed with anyone he's reasonable sure he won't break".
I also think the majority is right in thinking Dorian will be S/S only. People are pretty good at guessing and a lot of the time the majority guesses correctly, as I remember everyone guessed all LIs were bi in DA2 before it was announced.
So I'm hoping if Dorian is S/S at least IB will go for elves, so I can still choose between Cullen, IB and possibly Solas.
I hope Varric isn't a LI - no dwarf hate, it just seems he's pretty hung up on the real Bianca and no one wants to be second best!

It's just a feeling I have about her. She seems like she'd be only interested in elves. That's my personal gut feeling.

Because Sera is already Gender-restricted. Restricting her to elves only is just plain insulting. Unless they plan to add a lesbian Qunari/Tal-Vashoth, or a lesbian of any other race, I do not see them restricting Sera by race.
If they add a race-restricted Romance, Varric will probably be it. He even said he is not into humans. Race-restricted romances would more than likely not be the S/S only options.
All we know is that Sera is restricted to female inquisitors. That has absolutely nothing to do with her being restricted to elves. If there was anything other than that they are going to do both, you might have a reason to do something like you keep doing.

Because it sounds like they was a character race-restricted for the sake of being race-restricted, or because they want to have a specific character to a specific race because they plan to play that race.
I can reasonably speculate that Cassandra and Cullen will be straight because of their histories. Iron Bull has suggestions of being a bi/pan-sexual (sexually attracted to whoever). Varric might be bi but I do not know. Sera is confirmed lesbian, and the others I dare not touch until I have enough to make a reasonable guess.
From what has been posted about the technical difficulties of having everyone available to every race, I'd more think that Iron Bull would be Qunari only but available to both sexes, so if you play a Qunari you will get a romance and then Iron Bull not be available for any other race. This is not because of prejudice by the character but the fact that for each romance they would need an additional male and female cinematic for Qunari as they are so different in structure to all the other races, you couldn't just swap them in. This is why there may be restrictions for dwarfs because of their different body structure. (I never played dwarf in DAO. What happened there?)
Alternatively, Sera could be available to all races because she is female only, which halves the number of cinematics they need.
This would be true of any s/s male character only, so I suppose you have to look at who might have broadest appeal for male only. They also would need to look convincingly able to withstand the loving attention of a Qunari - I don't think Dorian has the physique.
Apart from the fact I don't want Dorian to be male only, I have to admit to a perverse wish for him not to be gay, because people are basing the "it must be Dorian" on a perceived stereotype and I would be disappointed if the Devs had done the same.
I also think the number of romances will not exceed 6, particularly if the majority are going to be available to all, because of the amount of work that has to go into that. May be they'll stretch it to 7 or 8 but I doubt it, unless the last two are definitely restricted by race.
My guesses are

And Elves are roughly the same size, so it's easier to compensate.
I don't think that race restrictions will be that numerous or complicated.
I just think that a race restricted romance will just be one + 1 romance to the other romances.
For example we would have 6 LIs + Iron bull for qunari only.
