This line has been attributed to Cole talking about Alistair. I'm not necessarily sure why, but that's the common consensus.
Because Alistair's mother is Fiona, so he's half-elf. He was the result of Maric's little tryst with Fiona in "The Calling"; the story in DAO was the cover-up story.
Why he'd say not to trust Alistair, though, that throws me. If that's even who he's referencing.

I believe it's not Vivienne who told him he sounds like a Pride demon, but the other way around:

We do not know that for sure. He cannot be killed, yes. But he probably can die. Nothing has ever been confirmed, only that the Doctor will not meet him again after the third meeting.
And this does add up - his cells renew too quickly for him to be killed, because any damage done to him will be fixed before it can end his life. But he does age, so regeneration is not quick enough to counteract decay.
I know immortal is not invincible. But still I know that every organic cell decays with every passing moment. To NEVER die, decay and regeneration must happen at the same speed (= instantly, because else renewal is slower than decay) an that speed definitely is quicker than stabbing/shotting/slicing or whatever way of killing.

What I've learnt in a lifetime of being a Who fan is nothing is ever canon.
On the subject of Solas' appearance - I still believe Fen'Harel was not an elf, because his mosaic. He is not even depicted like the others. So whether he possessed an ancient elf body sometime before or conjured one for himself like Cole, I have no idea.
And I have a feeling it is no coincidence that his name means 'Pride' in elven. Even Vivienne remarks that he sounds like a Pride demon... The Solasan Temple used to house a Pride demon...
If he turns out to be a mega Pride demon... *eye twitch*
That would be interesting. My thought is that he is an elf. Like the gods of Greece - he's most well known by the animal that he's associated with(like the halla lady goddess) and in art is depicted as such(so like Athena and the owl). Likely he can probably shapeshift(like Morrigan) into a wolf. He picks the name pride because he values wisdom and wisdom and pride are two sides of the same coin. Wisdom can be twisted into pride/arrogance(see his quest) and he feels that it was his pride that caused the elve's downfall. It's a reminder of his failures.
Also he can't very well be running around with his actual name.
I don't think elves losing their immortality has anything to do with humans, it started to fade away when the Creators were imprisoned/the Veil went up but it wasn't immediately noticeable in the chaos caused by those events. Then the human population started to spread, war broke out between the two races and because of the increased contact elves started to die of human diseases.
Not being surprised by illness and other mortal things Tevinter was able to win more fights than they lost, eventually crushing the elves completely.

But I find that duality concept really interesting. Spirits can become demons if one expects them to; Solas can be either Wisdom or Pride, depending on how you view him. The truth you see depends on your worldview, so your worldview shapes your reality. And it's better I do not get into it, because I like philosophy. 
Also, I'd totally be Compassion/Rage if I were a spirit/demon

I meant "taller than the contemporary elves", not giant like the giants from emprise du lion XD
Oh I see I think it would make sense if on average they were likely taller, but I also would think there would be a variety of heights and Solas might have been considered short.
