Really?!? I made my Lavellan a mage, but all the fanfics I find is with her as a rouge. 
Though to be honest, I'm really picky about fanfics, I don't like to try and picture someone else's Lavellan, so the fanfics I like best are as vague about Lavellan as they possibly can be.
Haha! Really?! xD I play an archer Lavellan and most of the Solavellan fanfics I've read has her as mage (you know, the whole "She's the First who's supposed to protect the clan from the Dread Wolf but unknowingly falls in love with the Dread Wolf" bit).
And yes, I'd rather they kept her class vague at least (so I could get a chance to pretend it's my Lavellan smexing Solas up in the fic, hehe!
).
I'm sure I'm not the only one who chose it just because I enjoyed the Cousland story the most and the integration of the background into the story. It was a good and dramatic background that keeps you connected to the plot well so it's not surprising that people are drawn to it. Out of all the origins, it just felt the most right to me. As in it fit the most. People find what they like and stick to it even if there are other options, and the Cousland origin had a lot of pieces that made it compelling such as getting to know your family, their deaths, the revenge plot and your missing brother. Getting to choose whether or not to be a monarch was a perk too.
I've actually had the opposite experience from yours! My friends who have played DA all chose non-humans and they always got on my case about choosing the "boring" and "vanilla" option. I saw a lot of that around the fandom too for a while, where some people were full on angry with Cousland players for reasons I don't really understand. I guess nobody can win, huh? 
Yes, the Cousland origin is the most connected to the plot in DAO, I admit. I've played male Cousland for my second PT and it's pretty fun, though my Mahariel will always be my baby. I'm just tired of hearing from people I know saying they chose Cousland as their first PT. My cousins, my sister, my brother-in-law... All Cousland players! Also, I just found out that one of our interns is a big fan of Dragon Age and Mass Effect and when I asked her what she played as in DAO, she said "Female Cousland who married Alistair." So yeah... 
And yup, I guess it just goes to show that nobody can win. ^__^;
