Although your point about Cole being an exception is true, the point I'm making is that the fact that it's possible at all rules out simplicity in general. They obviously have layers that even a being a thousand years old has yet to uncover.
And I would like to point out that the conversation went like this:
Solas: How do you feel, Cole, now that you dealt with the Templar?
Cole: I don't know. He hurt me ... hurt the real Cole. I'm angry at him.
Cole: I can't let that go. I have to become more, let it make me real.
Solas: You may well become fully human, after all. I never though to see it.
Cole: When did you see it before?

Cole: No, you didn't. It's harder to hear, sometimes. Sorry.
Solas: Good luck, Cole. You have taken a difficult road.
That exchange implies - to me at least - that Solas had actually seen it before and was using Cole's uncertainty about hearing to cover for it. I could be wrong of course.

I actually believe Solas and Wisdom could have been in some kind of relationship (years ago, since he says it's been a long time since someone actually showed him affection), and that makes his personal mission just sadder. I'll copy-paste what I wrote some days ago about spirits/people relationship, bad grammar included, because I'm lazy lol:
Maybe it depends on what we believe is a romantic relationship. Maybe spirits have their own take on this, maybe they have deep and meaningful relationship related to the ideal they embody. So, a spirit of wisdom would probably discuss about history, past, time and phylosophy, while a desire demon would trap someone in an illusion to give them what they desire (sorta like the desire demon you find in the circle tower in origins).
You do have a point. There was the one codex entry about a man who loved a spirit above any woman. And he basically turned her into a desire demon.
Edit: But then Solas had sex with spirits. Confirmed by Blackwall and Sera.
He says it's not that simple. I believe sexy times between a spirit and a real person would be nothing like the sexy times we know and love.

I think that once spirits 'cross over' they do change a fair bit. They are no longer just spirits. Even the demons we see that take 'human' form [Imshael], appear different from their usual kin. So Solas probably has seen it before. But I doubt doubt that there can be some problems when spirits change what it is that they are.
Random tangent, but someone speculated once that the origin of Elgar'nan [or even Fen'Harel], might have come from SpiritMortal+Elf=super baby.

In the game though, we see that Solas merely omits his true age and identity, and what he knows about how Corypheus got the orb. Both for a specific reason; letting you know who he is and how he helped create the current crisis would prevent him from being able to help you fix the mess and be free to move on after the current crisis is averted.
He makes it clear though that he loves spirits, and wants mortals to understand spirits, so I doubt he'd lie about that. Just because he lied about one thing doesn't mean he lies about everything.
And yet it took thousands of years for an immortal being who spends the vast majority of his time wandering the Fadeand interact with spirits to encounter one example in one spirit. That doesn't mean there are a whole bunch of them floating around, or that all, most, or even many have the capacity that Cole has. Or that there are enough floating around that Solas could find a soulmate (get it?) in the form of a spirit.
Even with his complexity, Cole is not exempt from the "complexity can corrupt spirits into demons" rule, since it's implied that the complexity he developed when he first left the Fade turned him into a demon, and he could still become a demon today. (That's why, during his personal quest, no one will let him kill the Templar out of revenge, since it's implied it could have turned him into a full-blown demon had they allowed it.)
You have just proved my point, which is that spirits are not simple. I never stated my opinion on love and romance with spirits and mortals. My point, and my only point, was that spirits are complex and that we don't know everything.
Also, we don't know what all Solas has lied about and you can't prove to me he hasn't lied about more than you think, so there we will have to agree to disagree.
