I really appreciate Bioware giving two LI that allow the player to RP their character as ace. I'm hoping this heralds more complex romance subplots where sex isn't the endgame senario.
Yeah, it's refreshing. Besides, I'm not sure if I understand the need for.. well, not just sex scenes but seeing characters naked or else... especially that, let's face it, when it comes to cutscenes and animations, graphics in RPGs aren't there yet in terms of realism >.>' and most of these things look pretty awkward, especially if they focus on.... too much detail, instead of fading to black or choosing a less overt, but more suggestive cadre. Leave more to the imagination, game! 
I mean, I suppose sex scene (or at least implication of sex) is kinda necessary whether it fits the character (like Iron Bull romance) or if it turns out that there's a kid on the way.... Which I'm not sure isn't what's happening for Blackwall, at the very least. That zoom (in final romance scene) from him kissing IQ to a toy he made looks kinda suspicious, lol.
Solas obviously has more life experience than Lavellan, especially depending on how you role play her, but I like to imagine my Lavellan surprises Solas with her forwardness. He's such an introvert, and so unassuming too (sorry everyone who thinks he's absolutely gorgeous, but for me, his personality made him attractive), it probably completely throws him off when Lavellan shows interest in him.
Preach it. Solas isn't bad looking at all (at the very least, he's interesting), but for me intelligence and personality always makes a person waaay more attractive.
Anyway - I think there are places in the game that suggest that them being constantly surprised by one another is one of the major factors why they're attracted to each other in the first place. There are a few instances in the game where Solas tells Lavellan that she manages to stump or surprise him and she admits the same.
It's like a constant discovery trip, which obviously isn't over yet (for both of them methinks!)
I somehow always thought Solas was the kind of introvert who acts reserved most of the time but is surprisingly passionate and... well, unleashed... when it comes to intimacy. Or that's just my imagination 
I think it's the "still waters run deep" effect
Most people who see him must've initially assumed that when it comes to matters of romance or intimacy he's going to be your average, awkward nerd..... but nooooo. The first time I heard him respond to Lavellan flirting I nearly destroyed my keyboard by spitting tea all over it - genuine "what the hell?" moment.
As for Solas being passionate... well I think we can all safely say that he's passionate, like - overall. There are some serious emotions boiling underneath and if he has a strong opinion about something, people are sure going to hear it at some point.
As for intimacy - I think the appeal lies in the fact that he's just so goddamn confident, maybe even nonchalant about much of it. Like, if he's about to get intimate, the girl will sure like it, I suppose. Just look at Lavellan when he surprises her by kissing her back in the Fade - it serves as a good contrast to Cullen's first kiss scene, which is adorkably awkward, and Inquisitor is kinda stumped for a moment, faintly fights back only to mellow out. There's not a shadow of that in the Fade scene, Lavellan is completely into it 
(what makes the Fade scene somewhat hilarious for me is that they composed the shot in a way that the ambient lighting gives Solas the closest I've seen to "quivering anime eyes" when he gives in and leans to kiss Lavellan again. I mean, come on Bioware - not only your elves look suspiciously anime-ish, with their lithe frames, thin limbs, big heads and huge eyes, but you have to give them 'quivering anime eyes" as well?
