I'm on the east coast of the US and I am often around and awake until very very late in part due to working independently. I have sort of always been like this. I remember staying up all night as a child and sometimes sneaking out to see the sunrise or to step outside when the bakery would start preparing the morning goods. 4am or so, and it was the most delightful smell.
This bread at 4am and the being up nights actually wove its way into some of my really short Solavellan fics (I made a series called Awake, appropriately enough, made up of short scenes). I headcanon her as having some insomnia (which isn't my issue either) and she finds a small peace in the less-demanding pre-dawn.
My parents sometimes mention how, back when we were still living in USA, they returned late home from work and all they could think of was warm bed, but NOPE - I was most awake during late night ours and considered it the best time to play
Aaaah, I even feel guilty about that till that day^^; Must've been quite a nuisance, but it does show that I've been like that even before clearly remembering things.
Also, the smell of freshly baked bread and other goods is one of the most delightful smells in existence, IMO. If I'm lucky to pass the bakery (and I know a few that bake goods basically 24/7) I just stop for a moment to enjoy it 
I am having an Earl Grey blend at 1am, so I may just make the EA conference after all. I'd choose something without caffeine but I really want Earl Grey now. Power of suggestion.

Coffee might just rival blood magic for how badly it affects your connection to the Fade. 
I drank entire bottle of Coke Zero (with lemon juice!) during the night just to keep myself awake. Now I feel I need something stronger to withstand till 10 AM so I'm about to drink a cup of strong coffee.... with milk, cinnamon syrup and birch sugar ;P
As for Solas and coffee... I wouldn't be surprised if he deemed it the evilest thing ever and intended to lock all coffee in existence in deepest recesses of the Abyss 
There must be some truth to that! I only drink coffee when I really need the kick (it's way too easy to become dependent on the stuff as a teacher,) but back at uni when I used to drink it all the time I found I never dreamed as often. Contrast to now, when I have extremely vivid dreams each night. (More so if I've been reading or playing games before bed.)
I rarely remember what they're about for longer than five minutes after waking up, but they do make sleeping an enjoyable pastime.
I have like... periods of vivid dreams sometimes and I'm not really sure what triggers it (I can sometimes trigger dreams by thinking about something before sleep, but periods of vivid dreams seem to happen spontaneously).
It recently happened to me as well - lots and lost of colorful dreams I either half-remember or only remember that I've had them... predominantly because I woke up and thought to myself "God Almighty, that was WEIRD!".
