Solas is an ancient elf, so this is kinda personal for him. It takes a lot of restraint to listen to someone spouting several misconceptions about your people and say nothing.
Especially from someone like Morrigan, who has gotten very far (and become a darling of Celene's court) by convincing everyone she's privy to ancient secrets no one else understands. (Granted, that's also how Solas got into the Inquisition, but I think that would just aggrivate him more.)
As Solas says when asked about Corytheus, "a god need never prove anything to anyone." And that really MUST be true, and Solas must have the best poker face of all time, since Morrigan's entire case for being where she is and doing what she does is dependent on knowledge that, as we learn, is entirely false. And she confidently spouts it in his face, and he can't say or do a damn thing without opening himself up to questions he doesn't want to answer.
I love Morrigan, but she was so consistently wrong about EVERYTHING in DA:I it became tiresome. Oh, Morrigan thinks this is true? It must be a mistake. I hope she's able to get some of her own back in whatever DA:4 ends up being because that got old quick.
