Well, two reasons. First of all, I'm a little bias: I've been pen pals with the bassist for almost 10 years. Secondly, I always thought that Varric used his humor and his hyperbole to cover up a lot of intense emotions.
While we've gotten glimpses here and there of his depth of his heart (more so in the comics,) I think that's just the tip of the iceburg. I believe that once he falls in love again, his emotions will be every bit as intense as that song is. Also, it is a little melancholy, reflecting his possible fears about not living to see another day. It's like...if he had just one last song to sing before the world ends, he would pour his heart and soul into it.
It's way more than a romance potential or anything like that for me. In some ways, I relate a little bit to Varric. Family that doesn't understand you, using charm and wit to cover deeper pain, and trying to deal with your world coming down. Even if I cannot romance him as a player, that little bit of connection will never go away.

Two very different but excellent ways to approach the character.
You see for me I'm not Varric. I've always been the Daisy, so focused on my goals that sometimes I need someone to make sure I don't accidentally wander into the Viscount's Gardens. I've had lots of Varrics in my life, and I approached Varric's character as someone I know, but don't necessarily relate to
. I don't know the intensity of his emotions, because those Varrics that I knew never showed me theirs. So I go for a song that covers up the intensity a little bit
