I like my potatoes mashed instead of au gratin.  Au gratin's alright, I just like 'em mashed, loaded with bacon, sour cream, chives, and a cheese blend.  Real cheese, not processed cheese product.

But they're soooo good with a bit of gruyere in them

And my god those mashed potatoes sound good. I usually only have bacon and sour cream when I have them baked.

Oooh, that's right.  They can't be peeled before they're mashed.  The skin's where the nutrients are.

I'm not sure...but I do know I like where this is going.  

 

Maybe Varric would be just be a more simpler type of potato, roasted with some salt, pepper and rosemary. Cut into large chunks and good for sopping up all that sauce....
