You could have an optional tutorial that takes you through levels 1-5.
(Get on with it!) type players will choose the option to skip this and start at level 5.


That'd be bad for the game, a first impression is important and if this tutorial is optional it can't have anything to do with the story.

I personally like starting from nothing, from a gameplay perspective. It's fun to have more control over how your character's combat abilities play out.

 

To be frank about the whole deal though, if you know anything about combat training, you'll know just how long it takes to learn basics like footwork and weapon handling. To that extent, our characters always start knowing how to fight fairly well, just without any of the special techniques associated with their class. Which is one of the reasons why I support "Class" Based RPGs over "Blank Slate" RPGs.. as your "Class" selection fills in the narrative gap of pre-existing training.

They are a level one peasant.  Turns out a level one peasant isn't as good as a level one paladin.  They receive the "standing around and staring vacantly at nothing" ability, rather than lay on hands. Which is nowhere near as useful in adventures.


There is a level 0 in D&D. Level 0 characters aren't proficient with weapons or armor. Being able to cast even 1 spell is a big deal.
