I worry about romancing Fenris! What if it means that I can't romance anyone else? Can you "have a go" ( 
) with other party members before you try with Fenris? Or are you committed to him even before he knows it?

If you want to romance Fenris , don't romance other party members.
It may be possible to sleep with Isabela , but I've tried once and couldn't romance Fenris after that.
On the other hand , you can sleep with Fenris , dump him ( so no more romance) and romance someone else.

I wouldn't sleep with anyone else if you want to bed Fenris.Not even Isabela.I think there's some kind of bug going on.
If you want to sleep with every companions , there's an order to do it.
I can't really help with that , but try google , I'm sure you're going to find some answers .
Fenris romance in general is easily glitched.
The Fenris romance is very buggy. I've slept with Isabela first and then tried romancing Fenris. All the flirt options are there until his Questioning Beliefs quest. The first flirt option shows up but the second doesn't. This locks you out of the romance. And if you romance Fenris first and then pursue Isabela Aveline will say you're with Fenris in The Long Road (which isn't true no matter what because he dumps you). Fenris will also comfort you after All That Remains instead of Isabela. And in Act 3 Merrill will banter with Fenris about being in love with Hawke. Overall those are minor bugs compared to potentially not being able to romance Fenris at all after Isabela.
The above is from my own experience. I'd listen to other posters though and just stay away from anyone else if you're intent on the Fenris romance.

Anders is sort of boring because I always romance him. Sebastian doesn't really sound fun. The type of hawke I'm playing doesn't do welsh accents, but still likes flings on the side 
. I have never really tried with Isabella. She just is a bit zevranny. Fenris is funny because he is awkward, but the bugs get you down. 
I don't really know who to choose! Now I can't test each one and see which is best because fenris is crawling with bugs!

Absolutely do not romance anyone before or after sleeping with Fenris if you intend on completing his romance. He's very into monogamy and three-years of painful celibacy. Basically, Fenris doesn't feel like he deserves Hawke, so in his mind, Hawke sleeping with anyone else at any time just reaffirms that fact and tells him that Hawke found someone more worthy of him/her.
There are a lot of little banters in Act 2, Act 3, and the DLCs to help with the pain of the three-year celibacy. The Merrill/Fenris banter where she teases him about being in love with Hawke can happen in Act 2 and is adorable and one of my favorites ("There are no puppy eyes."). If you bring him along for Legacy (I would suggest Act 2), Hawke can have some banter with him about their intimate night gone awry. I would suggest doing MotA in Act 3 after making up with Fenris because the banters and jealousy are better then.
It is possible to bump uglies with all three of Isabela, Anders and Fenris in one playthrough, and they will acknowledge it in at least one banter (and Anders and Fenris will have at least one other, of course, taunting whoever you pick to finalise with).
After Fenris's Act 2 arc, you'll be able to go to another romance (if you intend to actually pursue his romance, of course, *don't*). Anders may be dumped right after sex (causing him to be considerably annoyed for some reason).
You cannot do such with Merrill because Isabela would probably cut your balls off, and that's not in the animation budget.

Oh dear! I romanced anders again! Why is he so irresistible?!
At least I got a tumble with isabela first.

Why haven't the bugs been patched? Because the developers were lazy and now there's no reason to patch an old game due to lack of profit from doing so. At least with the Fenris romance there are some workarounds unlike entire spells (haste) that are bugged to the point of being near unusable.

They probably felt that.
But I would have thought if they fixed Fenris it would rake in more buyers. A lot of players like him a lot. I've seen the squees.
