But the only way to have a M!Cousland become king is by killing/exiling Alistair right? There's no other way around it?

Actually, you can become king and keep Alistair around (I actually did it on my last character). You just have to follow very specific requirements.
Do not harden him after his personal quest. He must stay unhardened, or you will either have to exile/kill him to become king yourself, or Alistair will automatically take the throne. Again, do NOT harden Alistair.
Talk to Anora before the Landsmeet and set up your engagement. When you get to the Landsmeet, make sure that Alistair kills Loghain, either by letting him fight Loghain (he will automatically kill him), or letting him do it after Riordan suggests making Loghain a Warden. If you kill Loghain yourself, Anora won't marry you, so make sure Alistair does it.
After Loghain is dead, Eamon will have you choose the ruler. Select the option that Anora rules with you ruling beside her, and there you go: a King Cousland with his best bud Alistair still hanging around. ![]()

It will work fine on the 360. I've done it on both the PS3 and the PC, and my friend did it on the 360, so there shouldn't be any problems. Have fun!
Technically he is the Prince Consort not King, Anora doesn't want her power questioned. Which is funny since the Couslands are a long established noble line well respected by the people while Anora is the daughter of a peasant raised to nobility who was just killed for treason and has not even conceived a royal heir.

It's just a title difference, in my opinion. There's no difference in how people treat you that I've seen, except Anora gets defensive about it when you refer to yourself as "King." When your FemCousland marries Alistair, she's technically the "princess-consort," but she still gets referred to as "Queen" several times in DA2, particularly during the "King Alistair" side quest and by Bodahn in Act 1.
I aways thought it was an odd title. I'm not sure were Anora got the idea, but I certanly don't plan to undermine her authority. I just wish to be addressed by the proper title.

This is the most crucial part. I once had a male Human Noble try to become king and keep Alistair only to mess it up and harden him. Man I tried everything I could think of, but I couldn't fix it.

There is a significant difference, yes.
In a patriarchal monarchy, King is the highest title, and would technically be King-Regnant. A ruling King's spouse would be a Queen-Consort.
If, however, a Queen rules in her own name, then she is a Queen-Regnant. There cannot be a King if there is a Queen-Regnant; there can only be a Prince-Consort.
A Queen-Regnant could certainly choose to refer to her spouse as a King if she so wants, but he would still be a Prince-Consort in practice (i.e., he would not be in the line of succession).
In the United Kingdom, I have read that a Queen-Regnant's spouse does not automatically assume a title (i.e., Prince-Consort) and must instead be issued one by Parliament, though I have not done enough reading to be certain of the logistics (and, likely, politics) involved.
In a given world state, if Anora maintains Cailan's throne, then she does so through any mixture of the following reasons:
If Alistair marries Anora, he does indeed become a King-Regnant and Anora remains a Queen-Consort, as she was to Cailan.
If a male Cousland marries Anora, he does so under the proviso that he is supporting her to be a Queen-Regnant, thus making him a Prince-Consort.
If a female Cousland marries Alistair, then he is the King-Regnant and she is the Queen-Consort.
