At 9:22 in the demo the character upgrade screen moves from "Inquisitor Level 7 mage" to Sera "Level 7 Rogue" to "Inquisitor level 7 Rogue" to "Iron Bull Level 7 Warrior"  http://www.polygon.c...footage-bioware

 

Is that because they are two demo's spliced together or is it a bug?

It's been discussed in the demo page and on the twitter page, it's most likely a bug since it went from sera to quizzy in such succession. So no worries :3
