What happens if Sheppard does not choose a romantic partner in any of the games? Is this possible? How does not choosing effect each game? What happens at the end of 3?

It doesn't change anything and yes it's possible to go through the triligy without having a romance. I did it once. At the end of ME3, instead of seeing your LI in the 3rd flashback, it shows the squadmate you used the most in the game. During the memorial wall scene it's the character you talked with the most that hold's Shepard's nameplate.

Totally possible (I have done it).
Very little changes.
In ME1:
- With romance partner, they go to your cabin for snuggle time.
- With no romance, I think you go immediately to the cockpit scene before dropping on Ilos.
In ME2:
- With romance partner, they go to your cabin for a conversation and something or other.
- With no romance, you stay at the galaxy map and Miranda tells you that everything is ready.
In ME3:
- With romance partner, they go to your cabin for a chat and snookie, and wake up next to you after the nightmare scene.
- Without romance partner, you wake up after the nightmare and stare into space.
That's about it. Some squadmate dialogue changes obviously if you are romancing someone versus no romance.

Just the thought of Shepard having no romance and whoever he/she talked with most putting the nameplate on the memorial board makes me sad.

Imagine how the people felt that romanced Miranda or Jack when it was another character holding the nameplate instead of Miranda or Jack.

blame Bioware for not allowing same-sex romances then. also blame them for the lame forced romance paths with Liara & Ashley. they won't even allow maleShep to give Kaidan a "straight" answer to why he was chosen to live instead of her.

When I did a no-romance playthrough it was Garrus holding the nameplate, which was just fine. Garrus was that Shep's brother from another... planet.
However, waking from the nightmare and then just... staring... at the vast emptiness of space? That was depressing.
