I hope we can flirt any romancable or even any companion and advisors in DAI and then they will reject the Inquisitor because of the character's preference (romancable character) or prioritize (un-romancable character)

for example if the Inquisitor is male and flirt enough with Sera, then he get rejected because Sera is gay.

And the same case if the Inquisitor flirt with an un-romancable character, he/she will get rejected for some make sense reason.

How are the chance of those kinda situation for happening?

I would say there is a fairly decent chance of at least some of them having a potential conversation involving rejection if their preferences do not match the Inquisitors. They did it in Mass Effect 3 with Samantha Traynor and a male Shepard, so it wouldn't be surprising for a similar conversation to occur, if only to stop people asking how they can romance those characters.
