I've been contemplating this for some time and think I've got it.
Vivienne - Exquisite tasting. She's lived a life of ease and luxury while having access to healing magic. If she grew up in the Circle, she's had far less exposure to diseases and parasites than other companions. At the same time, she's fit enough to adventure, so she must have kept herself in shape.
Cole - Nasty, nasty, nasty. I bet he tastes rotten or like ashes.
Blackwall - He's old enough that the taint has saturated in him. He may taste even worse than Cole.
Ironbull - The qunari tend to be in good health. I expect a strong, meaty taste, but as a fighter he likely lacks fat and the muscle might be tough. Stick him in a crock pot with some veggies though and cook him for 10 hours and I bet he'd be wonderful. I know the 'oxman' label makes you think beef, but I'm guessing he's more like boar.
Sera - City elf, so she probably has suffered from poor nutrition and exposure to illness. Also bony looking.
Solas - Perhaps better than Sera. I expect he'd have a wild and gamey flavor, maybe like quail.
Dorian - Noble born and noble bred. Healthy, young looking, and probably has never had to deal with disease or lack of nutrition. Tasty.
Cullen - Lyrium. What does it do to the way someone tastes? Does it give him a chemical flavor? There's no way to know unless a developer weighs in.
Leliana - Coddled as a child but then her life got rougher later on. Exposed to some darkspawn taint, though not enough to sicken her. I expect I'd pick her up at the grocers, not pay top price for her at a steakhouse.
Varric - What do surface dwarves taste like? I know those living in Orzamarr are foul tasting, but Varric has had a good life and spends his spare time drinking at a pub. Like Cullen, I need more information before I can make an evaluation.
Cassandra - Tough and less meat than Iron Bull. Would also need the crock pot treatment. Probably milder tasting than a qunari.
Winner:
Josephine - My pick for 'the best' tasting. Young, noble human, whose pursuits are scholarly, and who has never taken lyrium. It's a coin flip between her and Dorian as to who is the best but females tend to taste better than males due to higher fat content and more tender flesh.

I'm sure Cole would taste fine if you used enough Tabasco sauce.

You could cut him into thin strips; marinate him in Sriracha, lime, and honey; and then grill him. You could also make fried nuggets out of him and go heavy on the breading.
There are ways to make almost any fish or meat edible.

Not exactly what had I imagined when I read the thread title. Then again, likely what did come to mind is not exactly appropriate for public consumption.

I see a comparison of chicken and crocodile myself, similar taste but not quite as enjoyable.
I really can't believe I'm discussing this lol
Edit: My girlfriend is out of town and when she calls tonight and asks what I did today and I say "well I got in a discussion on the internet about eating people". What could possibly go wrong?

I've been waiting too long not to try it now, so, yeah, I'd do just anything to get that tender Cullen flesh in my mouth, lyrium taste be damned. I can flavor him with some powdered dragon blood like the Nevarrans do their meat if it really bothers me.
