The game still has a lot of marketing material to show, demos, and we are still more than 3 months away from release.
There is time for them to show about PC UI, and I think if we are rushing them to show it, its because we are spoiled by the amount of material we have already seen.
I think they are really answering for all the fans in any way possible. The problem is, the fan base interested in seeing the PC UI is not so big, and therefor it is not prioritized. But man, they even showed a female mage qunari for the demos all over E3 and stuff. I am really impressed with that move, and I can see how much they care for their fans.
