Is it just me or would anyone else like Bioware to release a Remastered/Anniversary edition of the entire Mass Effect triology or at the very least Mass Effect itself?

Honestly, I wouldn't be interested.
I don't need polish something I already like. I'm still playing 15 years old games and have no problem with their graphic so I don't see reason to buy something only because of better graphic and some tiny bonus DLC.

I'm personally tired of the "remastered" thing and the clamoring for it. I didn't get an Xbox One to play Xbox 360 games.

This topic seems to be a frequent occurrence on these forums. With perhaps the exception of ME1, ME2 and ME3 are far too recent to be remastered. People can also stop dreaming that ME3's ending will be "retconned" as everyone will never be happy regardless of what BioWare does. If you really hated the ending that much, just choose refusal and be done with it.

This is perhaps the only remaster [aside from MCC] I want to happen. Don't care about TLOU or GTAV remasters, but this? Oh yeah!

If they updated ME1 with ME3 style combat, graphics, and squad interactions, I'd definitely say yes to this.

ME2 could use some work, like giving us the option recruit any team member at any time, and getting rid of the silly timer between plot missions.

In any case, I wouldn't really be for this. I think it's best if they move forward. The games hold up well enough and aren't really in need of remasters.

Well, realistically, I'd see a "remastering" of the trilogy to simply improve the graphics, but not actually change the styles of the games. In ME1, most of what I'd see are better effects of the biotic powers, but no change to the actual power themselves, so the overall effect is the same; it just has a nicer coat of paint. Some obvious stuff like vastly improved open terrain and handling of the Mako would probably be there. Perhaps the Citadel would even get a larger number of animated NPC's to make the station look more populated and lively. Squad interactions would be nice, but I'm not sure if they'd bother to do more VA recording for it.

But please, elaborate.
It all really depends on what it is you want to have retcon'd. Is it just certain parts of the game, or everything? You can't do the latter without somehow dealing with the other games.

They'd have to rewrite ME2 entirely to make it about, you know, Reapers. The entire game should've been Arrival. (i.e. the Reapers are coming... wut do?)
People don't like ME3 because it's a bad game. Get over your butthurt already.

New coat of paint would be fine as long as it came with combos too. I like combos. Man, biotic explosions in ME1? Tech explosions on Colossuses? Lash on the geth hoppers? Yes please. And ME3 style grenades. ME1 grenades are dumb. You know how many I wasted trying to reload my gun?

Anyway, it takes more than that to make a good game anyway, at least for a narrative heavy game.

If they did they best make it so your previous DLC purchases unlocked the DLC in the new version as well.
Or better yet, include it in the base package of the game.
If they did, I would love to see controller support added, higher resolution game textures to include 1080p & 4K.
Other fun features
Seamless transition from 1 to 2 to 3. Maybe after the credits press A to continue to the next game, press B to Save & Quit to start a New Game+ etc
Voiced Codec get the voice leveled out and uniform in tone / audio quality across all 3 games. -- For an example of what I'm talking about, in ME1 or 2 listen to a codec in game from 1 and then listen to one from 2 or 3.
