Might as well be a Paragon.

Since i've learned that even if you become King as a Human Noble in Awakening your only called "Husband" and "Warden Commander" i wanted to be called "My Lord" i'm KING!! so that just ruined my King complex.

So i'm going to be playing as a Dwarf Noble but what fits more for our Aeducan Family? the classic Shield Warrior using the Auducan Family Shield or shall i follow into my brothers foot steps and hold a mighty Two Handed weapon?

All depends on what you enjoy playing.  As I found Dwarf Noble unbelievably boring once I finished Orzammar (I went there first right after Lothering), I used cheats on the console to speed up combat and reach the end as quickly as possible.  It's the ONLY origin I've had no desire to replay.

At all.

So make something you will have fun with.

Well there's also the Dwarf Commoner which is more fun than the Dwarf Noble and still lets you become a Paragon. A more satisfying progression, from sneering to cheering.

You get called King a lot in DA2. Not sure if you actually get a change at a future Landsmeet, or it's just easier for people to think of you as King.

See I always thought that should have been an option. I understand for most circumstances the human noble should just be consort but consider.

You can arrange it so that you win the Landsmeet outright without Anora's support, getting the nobles to vote in your favor (I'm not talking about the scenario where the nobles go against you and you win it in the duel). You're the Human Noble of one of the most respected houses in Fereldan and until Fergus shows up you're pretty much set to be Teryn Cousland. You've built the army thats going to deal with this big problem that threatens to swallow Fereldan and possibly the world, you've defeated war hero Loghain in single combat. You've done personal favors for several nobles (Eamon, Teagan, Isolde, Bann Sighard, unnamed noble, possibly Urien's son, and that lady Bann who's brother was in jail. All of whom would be dead or who's relatives would be dead if not for you).

You should be able to get Anora at this point behind the idea that you're king, not consort, or prince consort, or king consort, just plain king. After all, the Human Female Noble is always called Queen, so its not like it can't happen. Its only Anora's stubbornness that gets in the way in most cases but in this one scenario where you won without her, you can offer to be full king or to lock her in a tower with nothing. You hold all the cards. You should at least get a persuade check for that. Maybe after Alistair proves reluctant.

For DN I just played through the origin and console'd it to Orzammar, where it wasn't as different as I thought it would be.

TBH, the only origin I played through in its entirety was the Human Noble.

Technically the King Cousland really doesn't get much personal mention.  The "King" lines could also be referring to Alistair as well since he was a Gray Warden also and king (if you crown him).  It's kind of a catch all of dialogue--not very personal.  The only reference anyone makes is that one woman who you question about Anders' whereabouts and she will mention the warden who became king (I think?)  The guy who, if you talk him down while searching for Anders will say something like "Maker bless our good Queen Anora", (or "King Alistair") not the King Cousland. Again, this has more I believe to do with dialogue catch-all than snubbing the HNM.

I did get a personal mention from Leliana as to her affection for him, but that's all i got for my King Cousland that was personal, but considering she will say that about any warden she romanced, again, not that personal.

Anora doesn't get a personal cameo like King Alistair does, who will mention the Queen Cousland/mistress in his.  Perhaps if she had she might have mentioned the Gray Warden she married, but that wasn't included in the game.
