Young's Chocolate Stout tastes of chocolate, but Guinness tastes of Guinness. I remember once trying to make some onion soup using Guinness. It tasted like onions drowning in Guinness. Sometimes my "sounds like a good idea at the time" recipes work, other times they don't. I hope the compost heap enjoyed that one more than we did.

Young's Chocolate Stout tastes of chocolate, but Guinness tastes of Guinness. I remember once trying to make some onion soup using Guinness. It tasted like onions drowning in Guinness. Sometimes my "sounds like a good idea at the time" recipes work, other times they don't. I hope the compost heap enjoyed that one more than we did.

The key is moderation. Cooking/baking with wine or beer (or whiskey for that matter) should never TASTE like said libation, except perhaps on the finish. It ought to be a hint of the flavor of the booze...

Yeah, that was an early attempt at cooking with booze. I regularly use wine, whisky, sherry etc these days but often in somewhat smaller quantities! In my naivety, I'd imagined that cooking would mellow the Guinness. It didn't.

I love things like steak & ale pie, though I find it's a potentially risky combination even with people who know what they're doing as it can sometimes taste a little too bitter.

Chef's tip of the day: If something is too bitter, balance the flavor by making it more sweet. All food is a bit salty, sour, bitter & sweet (Umame sometimes applies for Asian cusine) The best dishes are nicely balanced.

Food stereotypes are the worst, most false. People say that the British and Americans have crap food, er hello? I've been all around the world. Compared to the shite they have in places like south America, and basically all of the southern hemisphere bar India and Thailand, British and American foods are great. Yes we have some crap as well like anywhere, but try going to somewhwere like Bolivia.

Okay, I'm also ignorant about some stuff too; for example I don't know much about German food other than sausages and stuff, but I wouldn't then go on to say "German food is boring because it's just sausages", because that would be frankly rather silly.  I'd rather try it out for myself, and base any decisions on whether or not I should eat something on my mood, squeamishness and perceived quality of what I was about to eat.  And I'd still be reluctant to stereotype on that basis.  There's a world of food to be enjoyed, and stereotyping makes that world quite a lot smaller.

Vienna is one of the best eating cities in the world. No one does schnitzel nor strudel as well as the Viennese. These days, Eastern Europe is a fun place to indulge your inner gourmand. They have a bad reputation principally because of Communist rule. Since the fall of the Warsaw pact they have been rediscovering their national cuisines to the enrichment of their own and the world's culture.

Isn't that generalising as well? Honestly curious if you're saying it based on experience or not.

 

Edit: Actually, I'll say this: it IS generalising. South America does not by any means have a unified cuisine, and I'd know. I live there.

Yes I know that India and Thailand aren't in the Southern Hemisphere, don't be a pedant.

And no you're right, South America doesn't have a unified cuisine, but most if them are terrible anyway. That was my point. Best thing about Argentina is it's steak, that was the only country south of Mexico that I got any decent food.

First time I talked to EarthboundN in some time

 

Our conversation amounted to Cuban/American relations, A++ bone structure, and for whatever reason, crab rangoon.

 

Which is hard to find outside of the states.
