Would anyone be able to tell me how to get the vanilla hair files so I can manually reinstall them? Thanks in advance.

In Origin there is a repair option that will restore all original files, hair ones include.

To properly vanilla, deleting modded files before hitting Origin update is better. This has caused issues in the past with the toolset.

Don't know which mods you installed but on average, hair is applied to one or all of the following basegame PCC's:

 

BIOG_HMF_HIR_PRO.pcc (female hair)
BIOG_HMM_HIR_PRO_R.pcc (male hair)
BioP_Char.pcc (CC hair both genders)

 

The default femshep hair replacer also applies to:

BIOG_HMF_HED_PROMorph_R.pcc
SFXCharacterClass_Adept.pcc
SFXCharacterClass_Engineer.pcc
SFXCharacterClass_Infiltrator.pcc
SFXCharacterClass_Sentinel.pcc
SFXCharacterClass_Soldier.pcc
SFXCharacterClass_Vanguard.pcc

 

If you have a vanilla backup (which you should have, working with the toolset), copy those PCC's back into "..\Origin Games\Mass Effect 3\BIOGame\CookedPCConsole"  to overwrite and vanilla all possibly affected PCC's.

If you have the game disks you might be able to extract the .pccs you need from the archive file on the disk.

that way you won't have to uninstall all your other mods
