If you have other way to replay say a human many times in different ways , I ask to share how you do it please ? 
Well, you could play a 'jerk' but have some certain soft spots. Like for children, or if someone tries to trick or bully elders.
You get a certain situation given to start out with, but what else happened outside of that, the finer details are up to you. You could take the background 'Sole survivor' in Mass Effect for example and you could either play it as something that is still bothering you or something that you worked off, so it no longer bothers you.
That is part of role-playing when playing an RPG that is a digital game. On-screen might be a script the developers thought of. But every little thing, every little detail that happen's off-screen or how your character reacts to certain situations can be determined by YOU, by what YOU want to have happened in your characters past.
If you want to go that deep.
Personally, I think that a game - especially a role-game - that isn't worth playing AT LEAST a second time... was not worth the money to be purchased by me in the first place. It might be perfect for others, but... A game must intrigue me. Even if I discovered litterally everything in the first go, it must fascinate me enough to wonder 'what will happen if I do this' or 'who will they react if I play that'.
e.g. I'm going to start out with human, male, noble, rogue. Cause that's what I always do. I always play a red haired guy called Amanui - if possible with amber colored eyes. That's the base for me. From there on everything is a fair game. I'll just let the game and the game's world work on me.
Then I'll decide who gets to have fun next.
If I get in the situation where my status as 'human noble' gives me an advantage, I'm already wondering 'how would this play out if I was playing my elven mage?' or 'I wonder if he'd have made that dirty joke if I'd played as a women' :3
I enjoy that.
I sometimes enjoy watching others play on youtube as well, but... it's not the same. I want it to be MY character and MY/my characters decissions. I doubt I can find anyone who'll play the same combinations I'm interested in, play the same style and make the same choices as I would and at the very most - would like the same characters as me. Also... just watching is... boring most of the time. And you'll end up wishing the one in control would do something different you are more interested in. Or you'd think 'I'd have resolved this otherwise'.
Again, that's at least how it's for me :3 Different kind of players have different kinds of enjoyment after all.
