I don't think it should matter. Whether they find peace with someone else if we're not romancing them. I want my crew to be happy.

In ME, Garrus and Tali get together if you don't romance them.
And in DA2, Fenris and Isabella get together if you don't romance them. (At least physically they do, they talk about it with party banter.)

I'd rather that be a surprise. It's always interesting to see it fold out without any spoilers.
Perhaps the writers didn't imagine them as bisexual and didn't want to change their vision for the characters just so the proportion of players who use romantic content would have somebody extra to bang.
I feel like, as writers, they have ownership over their characters and this should be respected. They shouldn't have to do anything just because fans really, really want them to do it.
I know you're disappointed, but you still get two characters who were designed from the start to be interested in male Inquisitors.
I have to say it's a bit depressing that with all that 'extra' time when they could do whatever they wanted, the writers were only interested in making another stories of another two straight men and their straight relationships.
I can kinda see Blackwall/Cass or Cullen/Cass.
Cullen x Vivienne would probably happen, for some weird reason...

Cole is an awesome character, but I feel that introducing desire into a spirit would end poorly... and with Cole in a desire demon outfit.
By that mentality, straight females and homosexual gamers should have never ever complain that games don't cater to their preferences.
There's an important point to be made here, though - in the past, LGBT and women players complained that games didn't cater to their preferences because there really, truly were no romance options available.
I was part of the push to get same-sex romances into ME3, which attracted an incredible amount of abuse and vitriol - but it was worth doing, and necessary, because there were no options at all for gay players and Bioware seemed confused about whether femShep/Liara qualified as a lesbian relationship. ME3's straight romances for women were pretty much a horror show.
Everyone gets at least two options in Inquisition. Everyone. Nobody is talking from a position of having no content for them at all, so it makes the complaining seem quaint in comparison to those older situations.

Other than that, I'm not certain. We'll just have to see when we get a sense for them fully.
I know there's some rivalry between Varric and Cass.
There are probably quite a few good barbs in there.

I'm looking forward to meeting them all. As usual, even if I don't care for all of them or even one of them as a LI, I'll enjoy meeting everyone and learning their story, and chances are I'll find at least one to my taste in the romance area.
I know the romances are not the most important part of the game, but it does add an extra something that I appreciate, even when I raged about the DR. 
They all look interesting, romance or non-romance. Great job as usual on the NPC's.

If you'd told me ten years ago, or even three years ago that straight women would be getting the most options, I'd have laughed in your face. My only option in BG2 was Anomen. So who knows how things will look for s/s next game. I remember when devs said having a gay or lesbian character was pretty much off the table.
