As a rule, I try to have the best staff available of every Elemental type in inventory if possible, and I personally have a preference for Mana Regen. Armor changes and improves for every Act and only Hawke can wear new armors, so selling armor pieces for non-Mages can aid inventory and gold a little.
The most variation seems to be for accessories: rings, necklaces, and belts. Some of the Item DLC can include new gear for the Followers, but they are not required. For Hawke, I attempt to make my rounds of all the known shops early in both Act 2 and Act 3.
