If Aerie, Viconia and Jaheira are in the same party with a male main character who's eligible to romance the three of them, how much do they bicker and how long can one dawdle before sticking to a particular romance path?

They bicker a lot - and they start to do so relatively early. I can't tell you exactly when you have to chose, but it isn't very late into the game - there is a relatively obvious dialogue where you can simply state who you think is right, IIRC.
