Because Biotic explosions are just so dull. No variety, just a blue boom. There is more variety in Tech.
Agreed, which is why I'm raging that Kaidan didn't get Incinerate like other Sentinel squdmates, Miranda and Nyreen, got in Mass Effect 3. I'm creating a Sentinel Shepard and I want all the tech combos to be available to me at any time, but my team of Liara+Kaidan lacks a power which can set up fire explosions, so I will either have to drop one of them, and go for James, with his Incendiary Ammo and Carnage, or EDI, with her Incinerate, so that I can have my fire explosions, or just stick with the team and only have tech bursts and cryo explosions open to me. Damn you Bioware!

I haven't actually played as the Engineer class all that much, only a few hours in ME2 then I deleted it, I might start an Engineer Shepard one day, since it's the only class I have never taken through the trilogy.
I think the pure classes are the most boring to play through the trilogy with though, the hybrid classes have more going for them since they have a wider range of powers available to them instead of being restricted to either biotic, tech, combat, which can get really boring at times, though tech has much more variety than biotic or combat. Bonus powers can offer variety of course, but many people still end up picking a bonus power which matches with their classes power set anyway, so I guess it's a moot point.
I'm starting to regret creating an infiltrator for singleplayer. I don't like sniping, and don't see much point in stealth.

Let me echo that statement. I like sniping, but nothing beats cloaking and running up to a mook and blasting him in the face with a shotgun.
You can also ignore cloak completely and play it like an Engineer with ammo powers. Or use cloak and play it like an Engineer with Cloak and ammo powers.
As an Infiltrator, you have Sabotage and Incinerate. Take Energy Drain and use Cryo Ammo and you are good to go. Or take another bonus power. The Infiltrator can be surprisingly versatile with different playstyles with or without cloak.
I do sure like the melee Infiltrator. She's my second favorite melee only (no guns, no combos, no power spamming) build, of the three that I've completed the entire game with.

I want to re-do the adept/shotgun on insanity. That would make it a hole lot more difficult for me. Engineer all i use is sabotage and incinerate.
I liked the drone for flushing enemies out of cover. Didn't matter how far away they were, it'd appear behind them and zap them. Then I'd zap them, heh. Plus it keeps them busy and gives you a few seconds to find cover/line up shots yourself. Same goes for turrets there. Basically, distraction tactics.
Engineers are fun. Deploy your turret and drone and let them do the work while you sit back and enjoy. There are missions where I haven't used my weapon at all.

Did my one and only (so far) insanity run as an engineer. Once I learned to stay in cover stupid grenades and revive teammates from a distance, I had an absolute blast. I admit, it may have taken longer than it should have to learn to stay in cover *ahem*
I never seemed to really need them with 200% recharge. I am going through ME2 right now with an engineer once i get into ME3 again on insanity I might need to use them more =)
We will see when I get there.
I'm currently playing a new game plus as an engineer on insanity and having the drone and turret makes insanity easier. I just finished the coup and watched a phantom beat up my drone. Mean phantom. So I deploy another drone which killed the phantom.
