As stated in the tittle. If Bioware went the route of Dragon Age where Origin had the canon Warden and The canon Hawke, how would they go about choosing them?
If Bioware HAD to pick a Canon Shepard ( Not Ending related.)

I think they already did that. The hint that possible past characters might make a return in the Next Mass Effect already says a lot about a canon'd story. Also, Destroy is canon'd already as the Next Mass Effect will be in the same universe. Too bad, we won't see
Reapers, and green people.

Where is it said that it'll be in the same universe? From what I've heard they spoke of "different location"

For old characters to return, it must stay in the same universe. There are articles about Bioware's statement of possible old characters might make a return. That's a pretty big hint...

They would have said that characters from the Shepard's universe will not make an appearance directly to the fans if they weren't trying to hint that some characters would return. It's not solid, but it's sufficient enough to say that the universe hasn't changed. As screwed up as this universe is, there's still much to do in it.

If Bioware is making a sequel, I don't expect them to canonize much of anything when it comes to Shepard. Well, except that he stopped Saren and Sovereign, stopped the collectors, and destroyed the Reapers. Too many people took ownership of their Shepard, I don't think they would be stupid enough to canonize an LI or anything like that.
I do expect a number of retcons however.

I wonder when they mention characters possibly returning, are they talking about the Normandy crew and squadmates or are they talking about other characters that were not part of the Normandy.

They put in specifics, only "familiar faces." It's possible that we might see Liara.

Well given that bioware have said the new pc is *name* Shepard-T'soni I think it's quite clear what things are canon.
The blue children. Obviously, Ashley was not canon'd. But the games have always obviously made Liara more canon than anyone else.

As much as I wish this were true, it's pure speculation. Bioware hasn't said anything about when or where the next game will take place, other than a 'new region of space" - which could be an unexplored area of the Milky Way or even another galaxy. They also said there might be references to the characters and events of the trilogy, which is hardly enough to say they have canonized a particular version of events.

Maybe not a new Galaxy as a new galaxy would be dangerous, and there is no way to get to a new galaxy without having to travel through Dark Space. Most regions of the milky way is unexplored.

Why would they? Nothing Shepard did from ME1 to 3 should have any plot relevance in the next game.
If Bio are smart they will Distance the new games as far away as possible from the Original trilogy.
At best they will address 3 things in ME4. 1) Geth/Qurian 2) Krogan & 3) Red Blue Green
& with these 3 I'm hoping its just a short Cameo or Codex entry. Best to move away from the AIDS of the First trilogy as fast as possible.
As to their Cannon? Probably Peace, Geno Cured & GREEN as they are the "Right" Choices
