One of my favorite things to cook when I'm feeling celebratory is steak au poivre.  I generally use Grand Marnier as the cognac, to give the sauce just a hint of citrus.

It's a cream and cognac sauce.  You deglaze the pan with cognac after cooking the steak, light the alcohol on fire and gently shake out the flames, then whisk in cream until it's thick.
