My personal favorites from each game are
Velanna, Isabela and Leliana
For men I'd go with
Zevran, Jethann and Cole (he is a bit weathered but what the hell, it's Orlais, someone should be able to slap some concealer and foundation on him 
)
For interesting characters overall I'd go with
Flemeth, Arishok and Celene
My DAI picks will probably change though. It's a big game.
Outside: Leliana & Dorian.
I can't decide. I love what they did with Leliana in the frostbite engine, she looks better than ever. She's so pretty and her outfit is so pretty. Dorian in otherhand looks glorious too, I love his hair and moustache.
Inside: Cole?
He at least probaply is most earnest to do good. But to say for sure I need to know more about characters and what they stand for.

Beauty for me is personified by the character's personality as well as their appearance (I'm not talking about the word beauty as it's physical aesthetic sense). I can't really seperate personality from someone I find beautiful, because they are usually beautiful as a whole because of their personality (or an aspect I love about it), but I know there are a lot of characters who are popularly considered to be physically beautiful that I don't find beautiful at all because I dislike their personalities (Anora, for example).
DAO: Bann Teagan, Duncan, Cullen, Nathaniel (Awakening), Dagna (everything about her is beautiful 
), Loghain (I know, I know, but I understood his perspective and booted Alistair so quick to take him in; that and he has a really hot voice and DILF thing going on).
DA2: Varric, Arashok and pretty much all Tal'Vashoth (rawr), Isabela, Bethany, Cullen, Cassandra.
Actually, I didn't enjoy DA2 very much at all (besides one semi-hot moment in Ander's relationship I really didn't find the romances appealing whatsoever), but Varric, the Qunari present in it, and Isabela were the best parts by far, IMHO.
DAI: Blackwall, Cullen, Vivian.
I love Cullen and all, but I actually find him more attracive in DAO (with his nervous infatuation with my 'Amell' mage) then what I've seen of DAI so far. I hope DAI does him justice.

OH yeah, forgot Dorian (my bad) - he's spectacularly attractive and dapper. Also, totally agree about Gorim, I loved his part in lady Aeducan's story, and would have sent Alistair packing so fast if I could have had Gorim back. Annoying!
I'll have to wait until the game is out to be sure, but so far I don't like the DAI characters' looks - Cassandra was stunning in DA2, not so much in what I've seen of her in DAI. From the other games I'd nominate Alistair, Teagan and Nathaniel, Flemeth and Morrigan. Maybe Meredith.

I do agree with what you said about Cass, although for me the problem I have is how the characters look somewhat cartoony in some DAI CG clips (like the one with closeups of Varric and Cass), in comparison to the previous games. I'm not sure if it will be like that in game, or how obvious it will be if it is (in cut-scenes and such), but personally I feel the new looks a bit lacking (all except for Leliana, who looks a lot better). Still, I'm sure I'll love them all anyway.

Morrigan by far was the better looking person in DAO. Duncan follows very closely behind.
Isabella and Fenris were the best looking in DA2 with Isabella leading.
Vivienne has the most striking appearance in DA3 but I can't judge until I actually play.
As for inner beauty?
Duncan in DAO. He was a noble guy, strong and dedicated.
Merrill in DA2. She annoyed me but I like her innocence.
DA3: ? Can't know who has that until I actually play.
If we are just talking about companions? I'd say that:
DA: O - Outer beauty: Morrigan is very beautiful and none of the guys really do it for me. Inner beauty: I'd have to say Wynne. She's my type of gal (nagging and all).
DA 2 - Outer beauty: Default Carver, hands down. That's a good looking guy. Inner beauty: Probably Isabela. I know she's a bit rough around the edges, but she's really a "good person" deep down and I grew to really care about her as a character.
DA: I - Outer beauty: Dorian. Smexy, smexy Dorian. Inner beauty: Not sure yet. Probably Solas, if I had to guess.
