I'm getting 25 melee defence.
It makes more sense to me than a health boost, which seemed like it'd be neglible at higher levels. Being harder to hit and more "tanky" is also more lore friendly, since the Qunari are known for being proficient warriors and it took most of Thedas banding together to repel them during the Qunari wars.

You can't say that for sure. It will depend on a host of contributing factors.

Hawke actually did have that power. I can't remember exactly how, but mage Hawke would sometimes finish off enemies by summoning a couple of demon hands to tear them in two.
When used on an ogre with low health, Crushing Prison triggers a special death animation for the ogre similar to the one during Varric's first version of Hawke's flight from Lothering. On other ordinary sized enemies who die due to this spell, the death animation is of a single hand which crushes them.
