For example, if I kill a red templar or a venetori, can I take their armor off their dead body and put it on myself or are those armors restricted for player characters and followers?
Can we wear ANY armor in the game?

I think it's restricted to random drops/predetermined boss drops, and class restricted. But that's why they're giving us an extensive crafting system instead. We might be able to craft Red Templar armor, or something that looks like it for our class.

Hmm, have they officially commented on this or are we left guessing here? I REAAAALLY want that Venetori armor. Would look bad ass as fuaaaaaaark on Cole.

It's not class restricted, everyone can wear whatever armor you decide to give them, mages and rogues can wear heavy armor if you wanted them to.
The whole crafting and customization system is extremely deep and complex and we likely can make something close to what they wear even if we can't quite find it.
As for the op's question, the answer is probably depending on if your characters have the stats for it and it's rarity.
Also you can modify it even further and make it better and better with the new crafting and customization system they created.

companion armor follows a set design to it. you can give them different armors but it will always morph to fit the companions overall image. you can't put Iron Bull in a robe and you can't put Vivienne in full plate.

I also remember hearing that you can use any template for any class when crafting armor but I remember when they showed those small bits of the armor crafting that there was a "heavy armor" thing. don't know if that is class related or if there a penalties tied into the weight of armor.

Pieces of armor always refer to the use of the character. As soon as I can put armor and shield to iron bull and silk to mages, it is ok...

I thought I read that there would be class and stat restrictions for stuff you pick up, but not on stuff you craft. So if you want mage plate you have to make it yourself.

When we're crafting armor can we customize the shoulder pads, chest plate, etc? I know they confirmed we can change the color, but can we change the actual aesthetics?

Obviously. I don't wear any dress that isn't absolutely festooned with ruffles.
To OP: Templar looking armour might drop, or a schematic to make it. It's up in the air. Just because you kill a templar, doesn't mean you'll certainly get Templar armour even if it does drop though.
And 'Venatori' style armour wouldn't look Venatori style on Cole. It'll morph to fit one of his preset images. Which, I'm sure, is covered from head to foot.

From the looting we've seen in the demos, it doesn't look like enemies drop whatever armor they were wearing. Would be major loot overload if every Templar you downed had a whole set of Templar armor on them.
As for Venatori and Red Templar armor, I wouldn't be surprised if Bioware restricts bad guy armor to bad guys, for storytelling cohesion. Was one of the ways DA2 excelled over DA:O, in that enemy factions tended to have specific visual styles rather than all wearing the same leather and plate the player could.
(Then again, like half of the armor sets in ME3 had Cerberus logos all over them, so you may get your wish.)

Yes, Cameron confirmed this in one of the interviews I watched. He said it's possible to make your entire party's armor pink if you want to.
