Back on topic, My Human noble will be a wine drinker, just because (shock) I'm not playing him as a rebel against his noble birth and honestly ale is not what he'd usually be exposed to.
I am a huge bioware fan....and they love me too! (a hilarious joke that involves ME3, my friends, and all the stuff I got out of spectre boxes) I am not arrogant, I respect the fact its their game and no one has the right to demand anything (my sig is a joke with the dual wielding 2 handed weapons as I know its already NOT going to happen...even though it should 
) That said. I have full on faith that once you visit Seheron or Par Vollen they will let you submit to the Qun! Which I would do in a heartbeat.
I would trade all of my Inquisition for a bunch of bland qunari with minimal dialogue to get the job done if I could. "Sten" and I got this.

Anything strong like whiskey, vodka or rum. Absolutely no ale/beer. And no sipping either. If the intention is to get drunk she'll be guzzling it from the bottle.

My Elven female Inquisitor is not one to drink. She's more likely to dunk her glass over a shem's head or shatter it with her bare hands than have a sip; in fact, out of all the planned Inqs I have, I don't think any of them are the type to drink anything alcoholic, unless it's water or fruit juice. Boring, I know.

My Dalish Inquisitor spent his entire life in the northern Free Marches, as per the elven background written by BioWare.
The Minanter River runs through that part of the region, making it one of the most fertile in Thedas.
He would probably drink rice wine or tea, depending on the major crops in the region.
He's pragmatic that way, drinking whatever is available (and non-toxic, preferably).
