I'd like Jack Wall to reunite with Sam Hullick personally.
Although in some alternate universe I'd like Simon Posford or Carbon Based Lifeforms to score it. It would never happen though.
I just feel like, while Christopher Lennertz added some cinematic power to the score his music just isn't as iconic, and sounds in the same vibe as Hanz Zimmer's music. I think Sam Hulick is really good at creating atmospheric music whether it's quiet or action-heavy, but once it comes to epicness and being grand in scope Sam Hulick can't impress me in the same way as Jack Wall could. I think Sam and Jack played perfectly off each other's strengths and weaknesses. The sci-fi moments and emotional moments were delivered mostly by Hulick while Jack made the game knock it out of the park whenever it reached its climaxes. When you remove one of them Mass Effect loses something and I really felt the abscence of Jack in ME3, especially in stuff like Priority Earth. Sam Hulick sends shivers down my spine with the Mars soundtrack and the Catalyst theme but his Earth combat music went for kind of a fanfare feel which is something Jack would've nailed but Sam Hulick's take comes off as rather farcical.

Agreed. though Christopher Lennertz did provide some solid tracks in ''Stand fast, Stand strong, Stand together'' and especially ''A Future for the Krogan''. ME3 did lack some memorable action music akin to Suicide Mission or Virmire, and Jack Wall could have delivered some excellent tracks.
However, I'm still quite happy with the soundtrack we got with ME3. It was very heavy and emotional, and I appreciated a turn away from sci-fi music towards orchestral for certain scenes. Leaving Earth and An End, Once and For all fit their scenes perfectly.
So a mix of everything at the right times if what I would look for in ME Next. Bring back Jack Wall and Sam Hulick for old times sake and familiarity with the franchise. Add in Jeremy Soul, who composed excellent soundtracks for Skyrim and KOTOR, and that way we have a trinity of sorts. They all have experience with sci-fi and orchestral, so that's a perfect mix right there.
Jack Wall handles all the epic fight and battle scenes (like Suicide Mission), Sam handles all the emotional scenes (I was Lost without you / An end once and for all), and Jeremy Soul for some atmospheric exploration/planetary music (Ahto City from KOTOR is one of my all time favorites, such a great track!)

As far as ME3's combat tracks go, I thought the Mars theme was excellent. That's one of my favorite tracks in the series.
Reaper Chase was also very good.
Good call out for M83. They would be well-suited for Mass Effect.
I'm going to nominate Thomas Bergersen because everything he does is amazing. Bioware has used his music in their trailers for almost every game since Mass Effect.

Sam Hulick if you had to pick one, hope there is a small mix of a few composers and they do it mostly in the style of the ME1 music.
If someone new was to come in, I'd seriously get Daft Punk in, after hearing the music for Tron Legacy, it just reminded me of Mass Effect:
