Well in my head canon, after picking control my shepard got the reapers to rebuild the galaxy and share the technology culture and history of the cycles that had gone before. Also because reapers get the genetic information of the races they turn into reapers it's possible we could use that genetic information to clone species which had gone before and bring some races back from extinction (hopefully, this certainly might not be possible). After the galaxy is relativly stable my shepard/catalyst gets the reapers to withdraw from the galaxy into dark space (because no single person should have that much power however noble their intentions) only to return at the time of the galaxies greatest need (like a super badass Arthur Pendragon).
Also in his Will my shepard leaves garrus the Normandy to command, his ship collection to Joker and his hamster, husk head and all monetary assets to his LI (liara).
They tell us another story about The Shepard.

Catalyst: "Releasing the energy of the Crucible will destroy the mass relays. The paths are open. It is up to you to choose."
Bleeding, beaten down, and tired, Svetlana Ivanova-Shepard decides she is going to complete her mission and wipe the slate clean by destroying the reapers as Hackett ordered. Dead reapers is how we end this.... Those words echoed in her mind. She turned right, raised her pistol, hoped for a better life for everyone, and a return to normal. She fired. The tube exploded.
Joker turned and grabbed the brim of his hat. Thane shook his head. Anderson nodded. Liara smiled. Red energy fired out of the Citadel. Reapers fell and died on Earth, but Big Ben remained standing. The beam fired through the mass relay which then exploded, and the beam expanded through the relay system and covered the galaxy blowing up all of the mass relays. Joker piloted the Normandy the best he could trying to outrun the expanding blast, but he failed. The Normandy crashed on some primitive world. Joker popped open the airlock and walked out followed by Liara and Javik. Then among the rubble, a gasp.
First thought: Whew! I survived.
Then: But now what? The relays are destroyed. I'll never see Liara again. And what about everyone else? Did the blast destroy all the ships? How will anyone get home? Wait! The mass relays blew up. We know what happens when a mass relay blows up. Now I know Joker is somewhere there isn't a relay, but anyone in a system with a relay is probably dead. Is anyone else even alive? Five years! I waited five years! For this?
I must have done something wrong. (visits forms. watches Youtubes of the endings) All the endings are virtually identical except for the color of the explosions on your screen: you die, the relays explode, and the Normandy crashes. I guess I didn't do anything wrong. (gets ice cream from freezer - eats entire pint while tears streaming down face)
Oh, well, multi-player was fun. Plays multi-player for next three months.
Back when the endings were still fresh in my mind, I had quite the head canon set up, but here are a few of the highlights.
Shepard survives and basically becomes Captain America from the first movie. He is a larger than life propaganda persona that encourages unity and perseverance amongst the allied species in overcoming the challenges faced by the destruction of the relays. He is offered the now vacant human seat on the council, but the council is eventually dissolved into a provisional government that includes all species (The Krogan horde on Earth and Quarian control of all dextro food production being particularly persuasive in encouraging a new form of government). He retires after the transition and lives a calm life with his LI Tali, eventually adopting a few kids and living a comfortable life off the vid royalties.
Though the galaxy learns how to repair a relay in only a few years, it takes centuries for the relay network to even come close to it's former scope. However, through QEC communication, advances in conventional FTL through reverse engineered reapers tech, and prioritized repair of key relays, most squad mates are able to return home within their lifetimes, though rather late in life. Certain colonies that relied on imports, and those long under reaper siege, face famine and eventual war. Most home worlds survive, albeit with many cities in ruins and lots of dead. Palaven is in particularly bad shape, though Turian stubbornness eventually wins out. The Salarian and Quarian home worlds come out relatively untouched.
Shepard is revered by all, as is his squad, who in the ending landed within FTL distance of Earth and were back within the week. Garrus jumps up the meritocratic ladder, though stays within the military and out of politics. Tali becomes a respected voice on the Admiralty board and is made the Quarian ambassador, finding far more success in politics than she did in military command. Wrex is successful in keeping the Krogan population in check, though his policies on population control are not without opposition. Joker goes on to support the repeal of AI restrictions, finds limited success but is able to get funding for a research into bringing EDI back online. Grunt travels the galaxy with Aralak company looking for bigger and bigger things to kill. Zaeed grows old, rich off his memoirs, and eventually senile, moving to Illium in his old age in order to marry Jesse (they are the currently the proud parents of 3 pistols). etc. etc.
In short, a happy ending with the minor caveat that the relays take a long time to repair and some colonies we never heard of die out.
I'm feeling sufficiently creative enough for this. tl;dr bs ahoy!!

Galaxy, socio-political: the war ends with confusion, it is unclear what the Crucible did and why. The Reapers' sudden seize fire is tentatively accepted. Diplomatically, they isolate themselves, but offer to help. While most folks don't want them around, some groups of people see the benefit of tasking them with rebuilding their planets and contact them. It's a very conditional state of peace but it never falls back into violent conflict with neither side particularly interested in more war (the galaxy already devastated, and the Reapers simply having no use for what's around them).
Organics uncover newfound abilities. Some species embrace the change more than others initially, though eventually they become natural to all. Salarians get ahead the most, however, with humans second. The Council is mostly ignored in the first year, as only the 'Ah yes' turian survives the war and the other four species don't rush to reclaim the open spots. Later, the Council includes the quarians and volus, and then finally all species participate in a new system of government whereby the galactic leaders coact virtually through comm-server in cyberspace and form consensuses. Conflict is frictional. On a macro scale, no major wars break out as a result of improved communication between all species and greater interest in cooperative achievement over war/seizure. On a local level, natural strife among organics for personal wants and needs persist. Some of these new organic abilties are abused for greater violence and fraud. These issues are lessened over time with growing affluence of nations, but some corners of the galaxy take longer to see improvement, and inequality can never be fully eradicated.
This galaxy is mainly focused on innovating new tech to further enhance organic abilities, as well as further exploration into uncharted territories within and even beyond the Milky Way.
Characters:
Shepard: deceased. Legacy is that of a very polarizing figure: loved/celebrated by some, hated/denounced by others. Shepard accepted that reality long ago and is at peace with it in death.
Garrus: goes back to Palaven and is tasked by the Primarch to clean out crime in areas lacking sufficient law enforcement during the recovery efforts. Later opens his own private security firm.
Tali: goes back to Rannoch to enjoy her people's new life.
Kaidan: given his affinity for tech, Kaidan enrolls in an Alliance program that trains new organic talents in their personnel and becomes the first member of a branch that specializes in combat use of them, dubbed the CyberMarines. In his first mission upon induction, Kaidan is assigned command of the SSV Normandy with some old faces on his squad, and is tasked with an outreach mission to aid the downtrodden batarians. Upon completion of this mission, Kaidan is promoted again and oversees exploration initiatives, while managing a personal side-project with Miranda Lawson.
Miranda: gets romantically involved with Kaidan and together they reclaim all Cerberus assets they can find and restart the organization under a new name as a techno-progressive agency.
Jack: heartbroken by Shepard's death and the loss of a few of her students in the war, she receives the journal Shepard kept since his Spectre days and published it as his autobiography, earning herself a sizeable fortune. Later becomes an item with Jimmy Vega and eventually heads back to Grisson Academy. Together they live on Elysium, the colony Shepard saved, close to his work and hers.
James: follows in Shepard's footsteps by enrolling/graduating N7, rising to the rank of Lt-Cmdr, and winning Jack's affection. Takes over the Normandy after Kaidan and heads several exploration missions with his own squad.
Liara: continues her work as Shadow Broker, though the use for her services becomes increasingly less important.
Javik: works for Liara as a private mercenary. Spends a lot of time bitter about the war, but slowly shifts his focus from his old rivalries to his few friendships courtesy much effort from Liara. And, they are also a thing, because I cannot help myself.
Kasumi: resurrects her boyfriend into synthetic form, apparently.
Morinth: stays out of trouble, trains to become an asari commando. Authors an e-book bringing awareness to her condition, and there's hope that a breakthrough will be made to cure/treat it in her lifetime.
Wrex: the krogan expand civilly since Shepard ultimately killed the rachni-queen during the war, opening up former rachni worlds for the krogan to colonize. Wrex and Bakara task the krogan with ambitious reconstruction and improvement of their planets. As the older generation dies out, Wrex promotes from the most promising youth that do not share their parents' views of species rivalry and military conquest.

The Crucible Event... wasn't what anyone was expecting. An unexplained cease-fire from the Reapers. The Mass-Relay network disabled. The Normandy stranded. Commander Shepard - missing in action.
A Squad of Marines exploring the Citadel eventually made their way through the Keeper tunnels to a previously unknown chamber. There they found the body of Admiral Anderson, and the corpse of an individual believed to be the Illusive Man. There was no sign of Shepard.
The Reapers set to work repairing the Mass Relays. No-one knew why. It didn't take them long, and within a couple of months there were no further sightings of the dreadnoughts. The Normandy eventually made its way home, in time for a funeral for the Commander, and the galaxy at large began making preparations for a new future.
Then, thirteen years after the Crucible Event, Ashley Williams found herself summoned to a research station that claimed to hold the key to discovering what happened to Commander Shepard...
If I pick Destroy and get 'The Breath' scene: Shepard wakes up after the beacon explosion on Eden Prime. The events of ME1 to ME3 were all a dream. Saren has escaped and must be brought to justice for the attack. I wonder where he got that giant space ship?
If I pick Destroy and the entire galaxy is destroyed: The entire Galaxy is destroyed. I don't care what Hackett says, no one survives.
If I pick the refuse ending: then the ending shown is what happens. The current cycle gets wiped out, the next cycle finds Liara's time capsules and beats the Reapers.
For my one character who chooses Control: The entire galaxy is now her plaything, a giant experiment under her control.
If I choose synthesis: Many freak out at the unexpected change, but there is peace for a short time. And then every organic-synthetic hybrid is wiped out because the change mutated into a deadly techno-organic virus.
Some cool stories here, ill be playing me3 with the happy ending this time. Looking forward to seeing how it is! Thanks for replies

Nitpicking to the max: you don't know it's the next cycle. It could be the one after the next, or the one after that etc.
