I was thinking about how we have 30 mounts, lip shine slider, Adam's apple slider, drapery selection, etc...and yet the lady Qunari get the shaft as far as hair
but it also made me think what if the horses are like different colors and patterns and have different manes? It wouldn't surprise me and that would mean the horses would get more (and likely better) styles than the Qunari player. If this happens in the game I dunno if I will laugh or scream

It's not just horses. It's dracolisks, harts, halla, battle nugs, and other stand-alones. All of these require unique models and textures that are vastly more work than a few hair meshes.
But someone decided that resources would be better expended on giving crazy diversity to a feature that was never expected, and as far as I can tell from the buzz on the forums, not hugely popular. A diversity in mounts is nice, but it's not exactly something people were clamoring for. It's not a deal-breaker for anyone to only have horses available to ride. But here we are, with the option to ride on the back of a battle nug. Sure, a battle nug could be cool, but let's face it, it's a gimmick. A joke mount. A few people might ride around on it for a laugh, maybe a few dwarf players will get a kick out of it. But do you know how many people would have been disappointed had the battle nug been left out? None. Not a single person. Because battle nugs weren't an established presence in the lore. They're not important for character definition. They're present because someone thought it would be a neat addition. The problem is, that neat addition cost resources. It came at the expense of time and effort that could have been directed towards other things. And now we're in a position where the entire qunari race (a hugely popular addition that many people were anticipating) has access to a piddly 3 hair meshes, but we have about a dozen mounts whose absence no-one would have missed at all.
When you announce that qunari are a playable race, players have a certain expectation. That expectation is rooted in what has been presented previously in official art, in-game assets, and approved third-party representations. When people say they want to play qunari, they mean qunari as they have been established; physically imposing (but not brutish), horned, white-haired giants. When the options provided do not cover this list of features, there's a problem.
