It is true that serfs are tied to the land and the master of it. But I have not come across any information from codex which would indicate that class restrictions (which are quite loose in DA world) would prevent individuals from changing their status either by leaving completely or changing profession. Though very few would do it given the usual lifespan. But the baker could, for instance, enlist as a foot soldier and go to war. A lot of people did that in DAI. Under the qun that is simply impossible.
There aren't any professional armies to enlist in (Kirkwall City Guard being the exception). You could at best volunteer whenever a conscription drive starts. You aren't ever going to change your profession. You would have grown up as a peasant your entire life, and you would have learned that one specific profession for most of it, be that a farmer, baker, smith or whatever. You wouldn't be able to just go "Now I want to be differnet" one day, since you wouldn't have the skills necessary to supply yourself and your family. You would starve. Also, the lord of the land, would be rather pissy about losing his smith probably.
Only the nobles of Thedas enjoy the luxury of a mutable lifestyle which can be changed to suit their every needs. If the noble used to be into philosophy, but now wants to start swordplay, he can do so. No problem.
