That happens to me as well, so I tend to stick with weapons I've made in previous games... so when ever I have access to a crafting system, there will always be...

 

Doomsayer (Maul)

Chaos Zweihander (Greatsword)

Sword of Valor (Greatsword or Longsword)

 

etc... 

 

I also give weapons names based on the place where I found its components... I recall making a weapon in Oblivion's Shimmering Isles expansion called the Abroccan Doomblade because that's the name of the dungeon where I found the longsword that I later enchanted.  Just let your imagination go nuts!
