Honestly, while I would like being able to adjust height and mass, I understand the logistical problems about it, and I'm not that upset that they've decided not to pursue that path. And I don't see the point of body tattoos since you're pretty much covered from neck to toes every moment of the game.

Are you serious!? We don't need any more body types. We have been delayed enough. I will be playing Inquisition next month, even if that means flying to Canada and raiding the Bioware office.

I'd like it, sure, but being realistic there has to be a point at which they stop adding things or the game would never actually get released. Given a choice between the different races or the different bodies types I'm very pleased they went the direction they did.
As for body tattoos and scars - would be cool to have. And I'd guess much easier to add post launch - so could happen if there is enough demand.

I think a good way to do body types would be to use the ones that are already in the game. For instance:
For males it could go something like this:
Qunari:
Iron Bull
Blackwall
Normal Human
Human:
Blackwall
Normal
Male Elf
Elf:
Normal Human
Solas
Fenris
Dwarf:
DA:O Dwarf
DA2 Varric
DA:I Varric
I know I stretched on the dwarves, considering it's not too clear on whether there are remodels and size differences (to me anyway), but if there are, then all of these things exist, all sizes are accounted for because they exist on companions, therefore to me as someone not familiar with designing, this seems like a good compromise.
