One of my favorite parts of watching movies and shows on DVD is the director's commentary. If a DVD comes with a commentary version, I'll watch the commentary more than the actual movie or show.
I always find that even the smallest details of the story and set have tons of thought behind them. When the actors or writers call out things like background objects and (seemingly) throwaway lines, it enhances my enjoyment of the finished product.
All that is to say, I'd really enjoy seeing something similar for DA:I.
It can't be exactly like a director's commentary, since videogames are nonlinear. But it would be fun to see a full Bioware LP of the game (some time after the game comes out), with a different group of people for each episode. Something like the Twitch streams, but for the whole game.

It's called developer commentary, portal and portal 2 have this and it's interesting to listen to. Mike Ladilaw definitely has the best voice for it and appearances by other members of the team would be good as well.
Trouble is with a minimum of 20 hours of story content thats a long time.
