Throwing in a vote for Vampire: The Masquerade -- Bloodlines. Excellent game, though a fan-patch is basically mandatory. Still, though, super brilliant. More along the lines of Deus Ex than a usual RPG, admittedly. If you like talking your way out of situations, the first half will probably be right up your alley (gets more annoying after that), but that's not the only way to play (you've got stealth, gunslinging, lockpicking, melee-ing...). For any faults, still endorse with most my heart.
Planescape: Torment is one of those games that critics laud over and slather with their moist lips. And, well, they do that for a reason, it's pretty fantastic. If you really liked Dragon Age for the dialogue and companions, this game is one for you. The combat's not really great, but it's not a game about combat. Mind you, combat's not awful either, bar a few evil moments. Er, good luck if you want to get Nordom, by the way.
Any other BioWare games are obvious suggestions. Well, except maybe for the Sonic one.

And just about the worst combat system anyone ever conceived of. (Come to think of it, a terrible combat system is certainly something it has in common with melee combat in Fallout.)
Ohh yes, I remember that bit now. Combat wasn't good at all.

Obsidian are big fans of a fixed PC background, especially one the player has to discover (KotOR2 is the worst offender).Yeah, OCs weren't really interesting. But if I had to choose I'd play NWN again. Player's background was up to us, while in NWN2 we were set to be... a random villager. Some NPCs were even suggesting we stink of West Harbor (if my memory serves me correctly). That killed my RPG experience in this game
I hope they don't ruin PoE with that.

If you are looking for an open world game with a great plot, and mass amounts of lore, then I would recommend Skyrim.
If you are looking for an rpg with a fun combat system, where you get to chain together your own combos, and have a mix of different playstyles from all three classes, I would really recommend Kingdoms of Amalur Awakening.

"Blackguard" is a pretty straight forward strategy-rpg, flawed as it maybe I still liked it. You could also take a look at "Sunless Sea", if you're more into the H. P. Lovecraft kind of things. Also I would like to seconded the "Ulitma V: Lazarus", plus I guess the dungeon sieges games as well..."Mount and Blade" is pretty cool too.

You get to pick between several different backgrounds for each class, I belive. And every background affects your skills and stats at the beginning.

Nverwinter Night 1 was better
Eh, OC NWN isn't the best. While it is true that Hordes of the Underdark is amazing, and better than most other NWN things by a lot, MotB is EXCELLENT. The full on evil end? Love it. But I'd say that NWN 2 ends up being worth playing once just so you can play Mask of the Betrayer.
Character creation in NWN2 was also pretty awesome simply because you can play as plan-touched.
