In all likelihood, I'd be a talented mage scholar at a Circle somewhere. Probably, Fereldan or the Free Marches. I would have joined the mage rebellion once that occured, however. Assuming I weren't a mage, I would probably be a travelling scholar type, like Brother Genitivi but without the religious convictions or faith.

Based on what I am in real life, short stature and in the creative industries, I would be a painter/sculptor in the Dwarven Court who secretly craves to be a surface dwarf because I hate being underground, freaks me out.

Chantry scholar maybe. Mage, if I was unlucky, though I'd probably leap to try and join the Grey Wardens.

I'd be a circle mage with above-average potential but doing little to cultivate my talents because I grew lackadaisical and simply enjoyed my life in the tower being undisturbed by most of the outside world.  During the rebellion I'd do everything I could to make sure no one saw me as a threat, self-preservation being my primary goal.

 

I'd also have a major crush on a kind templar who's actually married with kids.

Obviously a mighty Magister in the Glorious Tevinter Imperium. Powerful blood mage extraordinaire. From a prestige line of Altus mage family. With my own tower, personal army and bunch of slaves. Also holds a seat in the Senate, member of the Magisterium.
